Almond Granola Clusters

Some people eat chips, I eat my granola with a spoon straight from the package.

Granola is definitely one of my weaknesses. I remember when I, as a child, could open up a granola package and sit and eat the granola with a spoon as if it was candy. Because sure, it kind of was like candy too, because the granola I used to eat consisted of so much refined white sugar. It was my pleasure and I loved eating those small sweet crunchy lumps.

I still love granola but I have learned with age to not choose the ones with the refined sugar and preferably instead making my own. Yesterday evening I prepared myself a batch of granola clusters. This doesn’t have any white refined sugar because it is actually made with dates and almonds, and the flavour is simple fantastic!

THIS RECIPE IS

  • Gluten free

  • Vegan

  • Without refined sugar

  • Perfect for both weekdays and weekends

  • So delicious that you probably want to eat these instead of chips… or candy.

Crispy Granola Clusters

For one

INGREDIENTS

2,5 dl gluten free oats

2 dl almond flour

½ chopped almond or sunflower seeds

½ dl linseeds

1 dl coconut flakes

½ dl almond butter, preferably organic

8 soft dates

Pinch of real vanilla powder

1 tsp cinnamon

Pinch of himalaya salt

HOW TO MAKE IT

  • Preheat oven to 175 degrees Celsius.

  • Add almond butter, dates, vanilla and 2 tbsp water to a blender. Blend until a sauce is made.

  • Combine all remaining dry ingredients in a bowl. Add the liquid and stir until completely combined. Spread out the mixture evenly over a parchment lined baking sheet.

  • Bake for approx 25 minutes. Let it cool completely before breaking big or small clusters.

  • Enjoy!

NOTES

  • You can change the gluten free oats to ordinary rolled oats or fibre oats.
