Chocolate Chip Nut Oat Cookies

Chocolate Chip Nut Oat Cookies is such a crowd pleaser.

These cookies combine different textures, flavors and recipes into one. Using oats also make these cookies into a more fiber rich version, and depending on what liquid sweetener you choose you can also get these without added refined sugar. The cookies are simple to make, consisting of ingredients you (probably) already have in your kitchen, so lets get baking everyone! And don’t forget a glass of plantable milk on the side when eating these!

So let us first discuss the variation possibilities…

In this recipe I have given you some variation possibilities in terms of being able to pick the nut flour yourself, the kind of flour you want to use, the kind of nuts and the kind of liquid sweetener you’d like to use.

  • Nut flour: I am using almond flour for this recipe but you can also use for instance walnut flour or hazelnut flour. If you don’t have nut flour at home or don’t have access to it in store either, you can simply just mix your nuts of choice into flour. Just be careful you don’t mix it for too long because then the flour will turn into nut butter.

  • Flour: we are also using some kind of flour for this recipe and in this case you have quite many possibilities. I have made my cookies all gluten free, and if you want them gluten free too you can use for instance gluten free oat flour or buckwheat flour. Otherwise you can use plain plain wheat flour or for instance grahams flour to make them a bit more fiber rich. I recommend you NOT to use coconut flour though. Coconut flour make the cookies more spongy, and not crispy and crunchy as we want them.

  • Nuts: as for the nuts you have quite many possibilities here too. I recommend you to pick either walnuts or hazelnuts, first or foremost, but I had a natural flavored nut ix I used consisting of walnuts, hazelnuts, almonds and Brazil/ para nuts which worked great. Don’t forget to chop them a bit before adding them to the dough.

  • Liquid sweetener: nowadays there are so many different kinds of liquid sweetener available and that’s the reason I wanted to give you the possibility of picking what suits yourself the best - is it agave syrup? Maple Syrup? Ordinary syrup? Fiber syrup? Or something else?

Chocolate Chip Nut Oat Cookies

10-12 cookies

INGREDIENTS:

30 g nut flour of choice

70 g optional flour*

60 g (1.5 dl) rolled oats

1 tsp baking powder

a pinch of salt

a pinch of real vanilla powder

a handful of chocolate chips, roughly chopped

a handful of optional natural nuts,* roughly chopped

100 g liquid sweetener of choice

3 tbsp nut butter of choice

3 tbsp water

HOW TO MAKE:

  • Pre-heat the oven to 150 degrees C (302 F) and line a baking sheet with parchment paper.

  • Place all dry ingredients (nut flour, flour, oats, baking powder, salt, vanilla, chocolate and nuts) in a big bowl. Combining them all with a spatula or wooden spoon.

  • Add the liquid ingredients (sweetener, nut butter and water) and stir everything together until you get a well combined dough. I think it’s easiest to work with your hands after a while, but if you prefer using a spatula/ wooden spoon then that’s ok.

  • If the dough is very sticky, dip your fingers and handpalm into a little bit of water, and then press the dough thoroughly and roll the dough into 10-12 balls. Shape the balls into thick cookies and place them on the prepared baking sheet. The cookies do not spread in the oven so be sure you shape them the way you want them to be, pre oven.

  • Bake in the middle of the oven for approx 20’. Let them cool completely before eating, that’s when they get a slight caramel flavor but also the texture gets crunchy.

  • You can use

  • I used a combination of walnuts, Brazil para nuts, almond and hazelnuts - all natural (meaning no salt or sweetener is added to them). I recommend using a combination of one of these mentioned.
