Chunky Monkey Coconut Granola

Smile like a monkey with a new banana!

Today it’s time for me to give you a whole new granola recipe. This is a recipe that isn’t an ordinary granola; this is playful, yummy and have lots of various flavor combined together. Think Ben- and Jerry Ice cream but like granola. Yum! It is simple to make homemade granola and perfect to do during a weekend to have for the upcoming week. Try it!

What is a Chunky Monkey Coconut Granola?

We have a few different flavors which are combined in this granola - chocolate, coconut and banana. This is exactly a “monkey granola” should be right?

You get the sweetening from both the banana and the agave syrup, but if you don’t like banana don’t ger scared. The banana flavor isn’t strong, it more helps for the sweetening and texture; making the granola chunkier.

Let me tell you this about the chocolate

I make half of my granola with cacao and the other half without, and thereafter I combine the two different granolas together. You can choose by yourself if you want to do it 50-50 like I did, or making all of it chocolate. If you do half of it in chocolate flavor take 1-2 tbsp cacao, but if you want to make all of it chocolate, take 2-3 tbsp cacao but also increase the amount of agave a bit.

Chunky Monkey Coconut Granola

INGREDIENTS:

2 small ripped organic bananas (approx 200 g in total)

1/2 dl water

50 g melted coconut oil

1 tbsp sunflower seed oil


approx 6 dl optional oats

1 dl linseeds

1/2 dl sesame seeds

approx 3 tbsp agave syrup

1/2 dl walnuts (can be excluded)

a pinch of salt

two pinches of real vanilla


+ cacao

+ coconut flakes, coconut chips and possibly dried banana slices. 


HOW TO MAKE:

  • Heat oven to 200 degrees.

  • Mix banana, water and coconut oil to a smooth liquid.

  • Add all remaining ingredients (except agave syrup and cacao) in a bowl and mix. Pour over the liquid over your grains, and the syrup, and mix again with a spoon.

  • Place a parchment paper on a baking sheet and spread out half of the granola on the sheet. Keep the other half in the bowl and add 1-2 tbsp cacao depending on how dark chocolate you want it. Mix together.

  • Spread out the chocolate granola next to the other granola on the sheet. Place in the oven for approx 10'. Keep an eye on it though because it can get burned fast. 

  • Let the granola chill and then add coconut flakes (approx 1 dl), coconut chips and dried banan slices to the granola.
