Cinnamon Buckwheat Porridge with Figs and Cinnamon Caramel Sauce

Times are getting colder, I eat porridge for breakfast almost every single day and we are getting close to Christmas times. Isn’t it time we start powdering our porridge with cinnamon? This time, over our buckwheat porridge? I personally think that cinnamon works so delicious with porridge, but if I’m going to start eating porridge every day for breakfast, at least I can vary my porridge. Today I have made myself a porridge made of crushed buckwheat, or steel cut oats. Buckwheat has a slightly different taste than oats or rye but still, this porridge just turned out fantastic!

Buckwheat is also completely gluten free.

Important when using crushed buckwheat

If you are using crushed buckwheat, and not buckwheat flakes, you have to rinse of your grains in boiling hot water before making your porridge. This is because crushed buckwheat consists of fagopyrint which can irritate the mucosa. The boiling hot water is a necessity to rinse off the fagopyrint from the buckwheat before making the porridge. It’s very simple to do and I give you the instructions in the recipe.

Cinnamon Buckwheat Porridge with Figs and Cinnamon Caramel Sauce

INGREDIENTS FOR CARAMEL SAUCE

3 tbsp creamy peanut butter

1 tbsp agave syrup

1 tsp coconut oil

1/2 tsp cinnamon

INGREDIENTS FOR BUCKWHEAT PORRIDGE

1 dl crushed buckwheat

Boiling hot water for rinsing*

2,5 dl plant based milk

a pinch of real vanilla

1/2 tsp cinnamon

HOW TO MAKE IT

  • Place your buckwheat in a strainer. Pour boiling hot water over your crushed buckwheat, and then rinse it off in cold water.

  • Place the rinsed buckwheat in a small sauce pan. Add the milk and let it simmer for 5-8’ with the vanilla and cinnamon. Serve in a bowl.

  • Mix together the ingredients for the sauce thoroughly. It is easier to use some kind of blender, but since we only make a small batch it might be easier to just stir with a spoon. Do it thoroughly until it’s completely lump free and creamy.

  • Serve the sauce over your porridge together with more plant based milk, fresh figs and powdered cinnamon.
