Creamy Oatmeal with Fresh Figs, Homemade Fig Jam and Tahini

No Fig Deal, I got this!

Yes, I’m one of those nutters who actually sneaked in some figs into my luggage when I was coming back home from Greece to Sweden. I couldn’t resist NOT taking any figs with me, because we have a beautiful fig tree in our garden in Greece who every summer, in August, start to bloom. It was fig season and the figs just tasted fantastic. I needed to take some of these with me - and so I did!

The first thing I wanted to make with this delicious and sweet fruit was breakfast. I made a rather simple oatmeal but the toppings made it so much more than just “simple”. Make this fig-tahini-oatmeal and enjoy! This combination is delicious!

How to make your oatmeal more creamy?

Use oat flour to make your oatmeal more creamy. It’s not necessary to buy oat flour, what you basically only need to do is mix the oats you have (doesn’t matter if they are fiber oats, gluten free oats or just ordinary rolled oats) in a blender until it is flour.

And instead of using water for cooking the oat flour, cook it in some kind of plant based milk. It could be for instance oat milk or nut milk. Be sure you keep stirring the oatmeal while it’s being cooked, and don’t let it be cooked for too long because then it will just get extremely rich in texture.

Creamy Oatmeal with Fresh Figs and Tahini

INGREDIENTS:

1 dl oat flour

2,5 dl plant based milk

A few stevia drops OR 1 tsp agave syrip and a pinch of real vanilla

2 fresh figs

1 tbsp of fig jam, can be excluded

1 tbsp tahini

A little bit of sesame seeds and cinnamon for garnishing



HOW TO MAKE:

  • Place your oat flour and milk in a small sauce pan and bring to a bowl.

  • Add the stevia drops OR syrup + vanilla, decrease the heat and keep stirring until done.

  • Serve with figs, fig jam (if you want to), some more milk, cinnamon and tahini. This combination is delicious.
