Fluffy Vegan Pancakes with Whip Cream and Fresh Strawberries

A Sunday Breakfast tasting like Swedish Summer

Have you already eaten breakfast? Don't worry, now it's time for brunch pancakes! Because on Sundays I think it’s a must to eat pancakes - at least - once (but preferably more times ;) ). Today I’m gonna show you a simple recipe of veyr fluffy pancakes. Read further to get the recipe!

These pancakes are fantastic.

These vegan pancakes are simply fantastic, having no animalistic products, being extremely fluffy and totally delicious. They're simple to make too! They consist of a flour mixture combines with a “fake” vegan “buttermilk”

What should I garnish the pancakes with?

I have served my pancakes with fresh strawberries and vegan whip cream. This is a classic in Sweden, especially during summer, and I just felt I had to add this as garnishing on my pancakes. Otherwise, you can make a pancake cake or “pannkakstårta” as we say in Swedish and have whip cream and strawberries layered in between the pancakes. That is so good.

Fluffy Vegan Pancakes

INGREDIENTS:

2 dl plain wheat flour

1 tsp baking powder

a pinch of salt

1 tsp stevia, sukrin, coconut sugar or ordinary sugar

2 dl plantbased milk

a pinch of real vanilla or vanilla extract

1/2 tbsp apple cider vinegar

HOW TO MAKE:

  • Combine the dry ingredients in a big bowl.

  • In a small bowl combine, milk, vanilla and vinegar. Let it rest for 5'.

  • Then pour the liquid over the dry ingredients and stir together.

  • Heat a frying pan with optional cooking fat and fry pancakes. 

  • Serve with agave syrup, fresh strawberries and vegan whip cream.
