Fresh Potato and Tuna Salad with Lemon Dressing

Simple satisfying salads, that are fresh, simple to make, and also colorful and beautiful to look at. This salad is all of that. It was actually my mom who taught me how to make a salad like this. She has made a similar tuna salad with potatoes since I was a kid, just that I nowadays have made it into my own - and a bit more colorful - version. This potato tuna salad is really delicious and its so satisfying. As if this wasn’t enough reason for you to make it, you preferably eat this one cold, so it’s great lunch box food to have with you too!

Fresh Potato Tuna Salad with Lemon Dressing

INGREDIENTS:

3 potatoes

1 can (200/150 g drained weight) of tuna

3 leaves of Romano salad

A little bit of arugula, can be excluded

1 tomato

approx 10 cm of cucumber

a few slices of red, yellow or green bell pepper

3 tbsp corn

a few slices red onion

2 tsp olive oil

1 tbsp lemon juice

1 tbsp water

1 tsp dil

Herb salt or sea salt

Black pepper

HOW TO MAKE:

  • If you are using big potatoes, cut them in halves or quarters first. Boil the potatoes in a pot until cooked.

  • Meanwhile, cut the tomato, cucumber, pepper and romano salad into smaller pieces. Slice the red onion (onion can be excluded if you don't like it).

  • Combine olive oil, lemon juice, water and dil in a small bowl into a dressing.

  • When the potatoes are soft, preferably let them cool first, and then place them in a bowl together with all the vegetables, the romano salad and arugula (arugula can be excluded). Add the tuna and ripple over the dressing. Finish with herb salt or sea salt, and some black pepper.

  • Serve with some lemon slices on the side.
