Gnocchi Pomodoro Gratin

A gnocchi pomodori gratin can be by far the most simple recipe ever. You really just need to make a tomato sauce, pour it over the gnocchi already placed in a pan, garnish with grated cheese and then you’re done! Does that sound like too good to be true? I’m going to show you step-by-strep photos and guide you through, how you can make this delicious dish. It’s great, simple and quickly made everyday food, no matter if you are coming home from work being tired and needing to eat something, or if you are having a bunch of kids running around your home and you need to make something for your family that suits all stomachs. This dish is really great and I’d love for you to try it out!

Step-by-step

What kind of gnocchi should you use

I am actually using a gnocchi that is not only vegan but also based on potatoes, which also makes this dish entirely gluten free. It’s your personal choice of what gnocchi you want to use. If you even want to make your own, homemade, go ahead! I wasn’t that ambitious this time but I’ll definitely give it a go another time, and then I promise I’ll give you the recipe of that too.

Gnocchi Pomodoro Gratin

INGREDIENTS:

400 g fresh gnocchi of optional kind

0.5 onion

2 garlic cloves

1 tbsp tomato paste

2 x 400 g crushed tomatoes

1 tbsp basil

1 tbsp thyme

1 tsp chili flakes

Salt and black pepper

approx 1 dl (100 ml) vegan cheese or mozzarella

HOW TO MAKE:

  • Heat oven to 225 degrees C.

  • Pour some olive oil into a skillet. Finely chop the onion and press the garlics and add that to the skillet, and fry them soft.

  • Add tomato paste, crushed tomatoes, basil, thyme, and salt and black pepper after taste. Preferably let it it boil for at least 10’ before using in optional recipe.

  • Pour a little bit of olive oil into a baking pan and add the gnocchi. Season the gnocchi with salt and pour the tomato sauce on top of the gnocchi.

  • Grate the cheese and add that.

  • Place the pan in the oven for approx 30’, until the grain has gotten som nice color.

  • Before serving, garnish with some finely chopped fresh basil.
