Healthy Chocolate Chip Cookies

Chocolate chip cookies and a glass of milk, do I need to say more?

This is to all of you who want sweet chocolate chip cookies but which aren’t stuffed with sugar and animalistic products. These y’all, are my healthy chocolate chip cookies! So delicate, so perfect, so delicious. For some reason they have a a slight caramel flavor, and this in combination with the chocolate chips are great! And like if this wast enough, these cookies are also sugar free, vegan and even gluten free too!

Healthy Chocolate Chip Cookies

approx 9 cookies

INGREDIENTS:

3 dl optional oats

1,5 dl glutenfree flour mix or buckwheat flour

2 tbsp stevia or sweetening

2 tsp baking powder

a pinch of real vanilla

a pinch of sea salt

70 g agave syrup

75 g vegan butter

1 vegan egg (1 chia seed + 2 tbsp water) *

a few optional chocolate chips

HOW TO MAKE:

  • Heat oven to 175 degrees.

  • Prepare your vegan egg (read the note section)

  • Stir together all dry ingredients into a bowl.

  • Melt the butter and remove from heat. Pour down the syrup and combine. Add this to the bowl and mix it all together. Add the vegan egg (gelé) to the mixture and combine.

  • This dough is more sticky than regular cookie dough so I'd recommend you to use an ice cream scooper to scoop out half balls on a parchment paper on a baking sheet to half balls. Press in a few chocolate chips on top, making the “balls” slightly more flatter. Don’t make them flat though, because the cookies will flatten out by themselves in the oven, so be sure you have space in between the cookies.

  • Place the cookies in the oven for approx 12'.

  • Let them cool on a grill before digging in! 

NOTES:

  • Prepare your vegan eggs by combining the chia seed with the water in a small bowl. Let it rest on the side until the egg has become a "gelé" mixture.

  • If the cookies have spread out too much on the baking sheet, you can form them while hot using a knife. Just scrape the edges of the cookies, making them more even and round.
