Healthy Rice Crisp with Chocolate
It’s weekend, I’m feeling for chocolate and today I want to show this super simple rice crisp with chocolate! Rice crisp is usually made with caramel, but this time I was feeling for chocolate (ok, I’m always feeling for chocolate) and decided to make a yummy and super simple version. This is also gluten free and you can make these rice crisp completely sugar free too, depending on what chocolate you choose to use.
They don’t get completely crispy (which they aren’t supposed to either) but the chocolate is melting in your mouth when eating these and the combination with the rice puffs is amazing. I recommend you to store these in the freezer (at least in the beginning when wanting them to set) because then they get a nice firm texture.
You can use optional chocolate…
… But I recommend you to pick one that is a bit darker but still sweetened. You can use a vegan chocolate, a sugar free chocolate or whatever chocolate you want really. I had a vegan 70% Belgian chocolate of the finest quality.

Healthy Rice Crisp with Chocolate
INGREDIENTS:
160 g dark fine chocolate
1/4 cups (60ml) plantbased milk
30 g rice puffs
Sea salt
HOW TO MAKE::
Place the chocolate in a heat resistant bowl. Place the bowl over hot simmering water and let the chocolate melt completely until creamy.
Add the milk and stir around until creamy.
Add the rice puffs and just a small pinch of salt and combine all together.
Line an approx 15x15 cm pan and spread out the mixture evenly in the pan. Place in the freezeruntil set.
Cut into squares when completely set and dig in.
