Healthy Rocky Road

It’s scientifically proven chocolate makes you feel better. Just enjoy it.

It was a while ago I made this recipe for the first time. It became incredible. It's difficult not wanting to do it again now when I have a sweet tooth and these chocolate bites - as rocky road - is pure perfection and tastes like real chocolate. The first time I made these I gave it to a person who doesn't like "healthy food". He loved them. He was speechless and asked me a hundred times "so you mean it's really no sugar? Only healthy stuff?". Yes, there's only "healthy stuff" inside of these but these healthy rocky roads are still so fantastic!

Healthy Rocky Road

INGREDIENTS
40 g organic coconut oil

30 g agave syrup

2 tbsp raw cacao

1 tbsp maca powder

A pinch of real vanilla powder

2 tbsp organic peanut butter

Approx. 1 dl rice puffs*

1 tbsp grated coconut

2 tbsp goji berries*

approx 1 dl hazelnuts*

1 tbsp coconut flakes for garnishing

1 tsp bee pollen*

* All the ingredients for garnishing are approximately.


HOW TO MAKE IT

  • Melt the coconut oil in a small saucepan. Add the agave syrup, cacao, maca powder and vanilla powder and stir until lump free and combined.

  • Remove the pan from the heat and add peanut butter, puffed rice, and a little bit of the coconut, nuts and goji berries. But also save some of the last two for garnishing.

  • Place a baking sheet in a small baking pan and pour the rocky road mixture into it. Spread it evenly.

  • Place it in the fridge until set, for about 2 hours (you can also possibly put it in the freezer if you don’t have the patient to wait for 2 hours) and then serve.
