How to make the Most Simple Healthy Seed Loaf Bread

Bake it til You Make it.

Yes, I’m not even exaggerating right now, but this is actually like the most simple bread ever. This is a recipe I posted 7th of April 2015 (!!!) on my first blog. It’s such an old recipe and I am honestly surprised that we are still making this recipe in my family, even though so many years have passed! You might wonder why we still do this bread huh? Because it is the most simple, delicious and BEST bread in general. You simply stir all the ingredients together, pour the batter into a pan and then bake in the oven. Yes, seriously. This is bread I’m talking about and not a cake and it is THAT simple. Not only that, this bread consists of loads of seeds and fiber rich flours, making this bread more nutritious, satisfying and rich in fibers.

No fermentation?

No, we are not using any actual yeast in this bread recipe. We are using baking powder and baking soda and that is what makes this recipe so much more easier to do than other bread recipes. We don’t need to complicate things with fermentation times and temperatures. You simply just combine the ingredients and bake this bread in the oven straight away!

Spices?

If you like to add spices such as bread spices or cinnamon to the bread - go ahead! I don’t really do that. I prefer keeping the bread natural so that I can garnish with with both sweet and savory toppings, but it totally works

You can even freeze this bread!

As if this wasn’t good enough, this bread is perfect to freeze in and take out when needed. What I recommend you to do, is to simply slice the bread when it’s done and it has cooled, place the whole slices loaf in a plastic bag and freeze it in if you are not eating it straight away or in the closest couple of days. When wanting to serve the bread, take out only a few slices from the freezer of the whole loaf.

Wait, what are those kinds of flours?

Does graham flour and sifted rye flour sound weird? You can pretty much find these flours in all Swedish supermarkets, but if the country you are living in doesn't have these flours you can simply just use plain white wheat flour/ spelt flour instead.

Simple Seed Load Bread

INGREDIENTS:

3 dl (1.2 cups) graham flour

1 ½ dl (0.6 cups) sifted rye flour

1 dl (0.4 cups) plain wheat flour

2 dl (0.8 cups) sesam seeds

3/4 dl (03 cups) flax seeds

1 ½ tsp baking powder

1 tsp baking sode

1/2 tsp salt

2 tbsp honey or maple syrup

5 dl (2.1 cups) natural yoghurt

HOW TO MAKE:

  • Heat oven to 175 degrees C (345 F).

  • Bread and butter a loaf pan with sesame seeds

  • Combine all the dry ingredients together in a bowl. Stir down the honey and the yoghurt and combine it all together. The dough is much more sticky than ordinary bread dough.

  • Fill the prepared loaf pan with the dough and bake in the oven for approx 1 hour and 40 minutes.

  • When done, take out the bread from the pan and let it cool on a grid preferably covered with a baking towel before slicing and serving.

  • Thereafter, serve with optional topping but in my photos I have cottage cheese, avocado, fresh basil and herb salt.
