Kolokuthokeftedes - pronounced “ko-lo-ki-tho-kef-tedes” - is a Greek recipe of zucchini and feta cheese fritters which I’m so exited to share with you all today. This recipe is vegetarian and oh lord, so fresh and so suiting for summer! If you thought the Greek cuisine only consisted of meat dishes and recipes, think again - here’s the proof of one vegetarian recipe that makes me (almost) drool. Love these so much!
These are most often served as a side dish or a meze in Greece, but you can definitely eat them as a main dish with tzatziki, a Greek Salad and pita bread, or in a wrap or possible in a salad. The creativity is endless!

Some Step-by-Steps
Kolokuthokeftedes
INGREDIENTS:
700 g grated zucchini
250 g feta cheese
1 medium sized red onion
1/2 bunch of fresh basil
1/2 bunch of fresh spearmint
1/2 bunch of dil
Lemon zest from 1 lemon
1 tbsp lemon juice
2 eggs
100 g all purpose flour
Salt and black pepper
Approx 3 tbsp of frying oil or olive oil for frying
HOW TO MAKE:
Grate the zucchinis, using the largest blades of the grater.
Place the zucchini in a large bowl or in a kitchen towel and spread over a large amount of salt (approx 3 tsp), helping it release the water. Combine and let it set for 10’.
Squeeze out the water using your hands, or wrap up the grated zucchini with the towel and squeeze out as much water as possible. The less liquid the zucchini has, the crunchier the fritters later on will become.
Finely chop the onion or grate it. Finely chop all the herbs and crumble the feta cheese. Add these, the lemon zest and lemon juice, the egg and black pepper to the zucchini and combine with a spoon. Add the flour and combine it all but don’t over do it.
Heat up a frying pan with oil. Take a spoon of the mixture and add them to the pan. Pat them gently and let them fry on both sides until golden brown.
When done, transfer them to a lined plate with paper towel so they can drain off.
Serve with optional food.
