Lemon and Ginger Mint Ice Tea

Sun, summer, ice tea and the beach.

If you ever thought it was difficult making ice tea, oh I’m here to tell you the opposite! Ice tea is actually very simple to make, it has endless of possibilities and you can flavor it with your favorite fruits, berries and herbs if you want to. Today I want to share an ice tea version with lemon, ginger and spearmint, that you can make a big batch of and have stored in the fridge until serving. Totally worth saving this recipe for hot, summer days ahead!

What tea to use?

You can use green tea, spearmint tea bags, Rooibos tea bag or even Earl Grey tea bags. Just know that different kinds of teas give various colors to the tea, and depending on how long you let them soak in the water they give various amount of color and flavor.

Lemon and Ginger Mint Ice Tea

INGREDIENTS:

3 bags of tea* per 1 liter of water

4 cm fresh ginger

1 tbsp lemon zest

a few big leaves of fresh mint

2 tbsp agave syrup (honey works too)

Lemon juice from 1 lemon

+ Lemon slices, ice cubes and spearmint for garnishing

HOW TO MAKE:

  • Boil up the water and add the teabags to soak.

  • Peel and slices the ginger and add it to theater together with the lemon zest, fresh mint. Leave the syrup and lemon juice towards the end.

  • Remove the tea bags when the ice tea have gotten some color and flavor.

  • Let the tea cool in the fridge.

  • Add lemon slices and spearmint when serving. You can also add ice cubes but be sure you drink it straight away because if the ice end up melting the flavor can get too weak.
