No Bake Brownie with Coconut aka "Kärleksmums"

Chocolate + Coconut = Paradise

“Kärleksmums”, “Snoddas” or just simply No Bake Brownie with Coconut! Today I was inspired by one of Sweden’s most loved and made desserts “Kärleksmums”/ “Snoddas” and made a simple no bake version of it. It’s vegan , sugar free and slightly more “healthy” in terms of no consisting of anything refined. This is the perfect treat to serve when you want a small bite of something rich, chocolatey with a nice balance of coconut.

What is “Kärleksmums”?

Kärleksmums literally means “love yummies”” (doesn’t make any sense) and it is a baked soft fluffy brownie or cake with a chocolate glaze and coconut flakes. My mom used to make this dessert all the time when we were kids since it was simple to make and yet so delicious. Today I’m making a no bake version which is vegan, gluten free and sugar free too. It’s a lot softer and moister too then original version, and in general just delicious!

No Bake Brownie with Coconut aka "Kärleksmums"

approx 9 pieces

INGREDIENTS:

80 g date mass or pitted dates

90 g walnuts or hazelnut flour 

1 tsp (5 g) coconut oil

3 tbsp (45 g) peanut butter

1 dl plantbased milk 

20 g cacao

A pinch of salt

A pinch of real vanilla

80 g vegan sweetened dark chocolate

Coconut flakes


HOW TO MAKE:

  • Place all ingredients in a blender/food processor. Mix thoroughly until everything is lump free.

  • Line a small pan (approx 10x7 cm) with parchment paper and spread out the mixture evenly. Place in the freezer.

  • Meanwhile, melt the chocolate over water bath.

  • When melted take out the chocolate brownie from the freezer and spread out a layer of the melted chocolate on top. Garnish with coconut flakes.

  • Place in the freezer again for at least 20’ so it sets a bit. Then, dig in!
