Oatmeal with Pink Raspberry Milk, Coconut and Homemade Raspberry Jam

Spring is in the air. So even though times have been tough - worldwide - lately, I'm very thankful for this today. The sun has been shining over Gothenburg today, I have been out, meeting a friend and we have been outdoors all day long. If you live in a country where you don't have to be in a national quarantine, do yourself the favor and go out! Not to the city, to a mall, to shops and where lots of people are gathered. Go out to the forest, go to a lake, feel the nature and just walk around. If you have a local cafe next to you, grab a takeaway on a coffee or a meal and bring it with you. It's so nice to be out in the nature, and it makes you so good during these days when you stay home a little bit more the usual. Trust me.
This spring mood got me in a whole different vibe this morning and this wonderful breakfast was created. I was tired of my regular white oat milk over my porridge, and created instead my pink raspberry milk. It's so good. Let me tell you more about it!
What is Pink Raspberry Milk?
Well, it's very simple actually. It's plantbased milk colored and flavored with raspberries (and/or strawberries) and sweetening and vanilla. It is really simple to make but yet so delicious. You can actually use what ever berries you'd like (blueberries, wineberries, blackberries, strawberries) etc and then color and flavor your milk. It's very nice!
What sweetening can I use?
You can use stevia powder, stevia drops (or other similar sweetening) or agave syrup for the recipe.
How do I serve the pink milk?

Pink raspberry milk
INGREDIENTS:
2,5 dl plantbased milk
1,5 dl fresh or thawed frozen raspberries
A few steviadrops or approx 1,5 tsp stevia
A pinch of real vanilla
HOW TO MAKE:
Heat up the milk in a small sauce pan. Add the raspberries and stir it all together. Mash them lightly with a fork and add stevia and vanilla. Stir. Taste and see if you need more sweetening.
Heat up and let it simmer on low heat for a few minutes. Sift if there are lumps left or serve directly.
