One Pot Vegan Fajita Pasta

I love Mexican or Mexican Inspired food. Honestly, it’s one of my favorite cuisines, and when I was in California, and more precisely San Diego a few years ago which is wall-to-wall with Mexico, we ate sooo much Mexican-inspired-food. One day I wish to travel to THE actual Mexico to be able to eat their authentic delicious food. I can only imagine how tasteful it is! Until that day I will give you various Mexican inspired recipes because oh day*m, it is good! And today I’m not only giving you a recipe that is extremely delicious, I’m also giving you the most simple recipe which you only need one pot to make!

One Pot… what?

One Pot Vegan Fajita Pasta. Yes, you heard me! You only need one pot/ skillet to make this dish. Not like two, three or four different kinds so you have a bunch of things to dish afterwards. No you make this whole delicious dish in one pot and you have a complete dish including vegetables, a protein source, carb source, saucy, deliciousness and so much more. This dish I completely vegan and I have used a vegan substitute for chicken for this recipe (vegan “chicken” filet bites) and you can use optional substitute that is similar or possibly tofu too.

One Pot Vegan Fajita Pasta

INGREDIENTS

Optional cooking oil

0.5 onion

0.5 green bell pepper

0.5 red bell pepper

0.5 yellow bell pepper

1 garlic clove

300 g of vegan “chicken” filets/ bites or similar

60 g corn

1 tsp sweet paprika powder

1 tsp cumin

a pinch (or more) chili flakes

Salt and black pepper

5 dl (2 cups) oat milk or vegan cooking cream

90 g (1 cup) optional pasta

HOW TO MAKE:

  • Heat a frying pan with optional cooking oil. Slice or cut your onion and peppers to smaller pieces and fry them soft..

  • Add pressed garlic clove.

  • Add the “chicken” filet bites and combine everything and fry until cooked.

  • Add the seasoning, oat milk and combine everything together before adding the pasta. Bring the pasta to a boil and then decrease the heat to simmering. If needed, add some extra water so that the pasta can get cooked.

  • Let it boil until the pasta is soft which takes approx 10’, depending on the sort you have used.

  • When done, serve it like It is or serve with some grated cheese on top and avocado on the side.
