Oven Baked Apples with Walnut Crunch, Coconut Yoghurt and Agave Syrup

An apple a day keeps the doctor away.

Good morning everyone, I hope you’re all doing good! At my place, we’ve all been sick lately. I’m getting better but I’m so sick of being sick now (lol). I want to bake, cook, create and make so much fun things for you all without getting tired after 5’ of work. That was what was to good with this recipe I made today. It was so simple to make, it was delicious and you can actually eat it both for breakfast and dessert. I’m talking about my oven baked apples!

Yes, you can serve this both for breakfast and dessert

These oven baked apples are very simple to make and then it’s your choice of garnishing that decides whether of not this is a breakfast for a dessert,

For breakfast: if you want to serve these oven roasted apples for breakfast, then you can serve these with vanilla quark, Turkish yoghurt, coconut yoghurt or other vegan yoghurt, honey or agave syrup and tahini.

For dessert: if you want to serve it as a dessert serve it with whip cream or vegan cream, honey or agave syrup and more tahini. Even coconut flakes works nicely if you had served it with coconut yoghurt.

Are you allergic to walnuts?

If you are allergic to nuts, then just skip them, change to almond or serve with tahini instead.

Oven Baked apples with walnut crunch

3 apples
INGREDIENTS:

3 red sweet apples

1/2 dl honey or agave syrup

1/2 dl walnuts

2 tsp cinnamon

3 tbsp vegan or ordinary butter (coconut oil works too)

HOW TO MAKE:

  • Heat oven to 180 degrees.

  • Rinse off and use a apple corer to remove the stem and seeds from the apple.

  • Chop your walnuts and stir with cinnamon and agave syrup/ honey.

  • Fill your apples with this mixture and cover with 1 tbsp butter on each apple, like a lid.

  • Place in the oven for approx 10 minutes. Take it out and cover with aluminium foi, and bake in the oven for another 10'. 

  • Serve with optional kind of yoghurt (suits very well with coconut yoghurt), more honey/ agave syrup, tahini and coconut flakes.
