Poké Bowl with Asian Fused Marinated Halloumi

Poké bowl; a colorful, nutritious bowl originally from Hawaii, made with various natural ingredients such as vegetables, fruits and beans, rice and raw fish. “Poké” means “cut or slice” in Hawaiian and is referring to the chunks of raw fish. While poké is a regional American-based cuisine from Hawaii, traditional poké seasonings have been influenced by Japanese and other Asian cuisines. You can find lots of similar bowls to poké bowls in other areas and countries of the world such as the Philippines, Fiji, Tonga etc. That is the reason why you often nowadays can find various recipes of this famous dish.

The modern version

The modern version of the traditional Hawaiian food “poké”, is the poké bowl. The ingredients are most often arranged separately, rather than mixed. You can find lots of different kinds of ingredients in poké bowls like avocado, soy beans, mango, pineapple, cilantro. mushrooms, seaweed and sriracha.

My version…

…is a bit different for being a poké bowl because my poké bowl doesn’t consists of any fish. WHAT? Yes, I wanted to create a fish free poké bowl for those who cannot or don’t like to eat fish. What do I use instead? Marinated halloumi. Where shall I start to describe this delicious halloumi. This halloumi is extremely delicious and have this sweet-sour-spicy dressing that goes so well in a fresh poké bowl. It consists of, for instance, lemon juice, chili flakes and soy sauce. You can obviously eat this marinated halloumi to other foods as well (like in a wrap or other salads) but in this kind of way, where we have made this Asian fused marinade, it’s just amazing in the poké bowl.

Since halloumi is very salty from the beginning and we also add some soy to it, I recommend you to not add more salt to you other ingredients in your poké bowl. The halloumi is what gives the saltiness. Also know, that the halloumi part of the recipe is for approx 2 servings of halloumi if having it in a poké bowl.

Anyway, I’m so excited to show you the recipe of my poké bowl now, with my asian fused marinated halloumi. It’s simple to make, so fresh and so delicious!


THIS RECIPE IS:

Poké Bowl with Asian Fused Marinated Halloumi

INGREDIENTS:

1.5 tbsp olive oil

a pinch - 0.5 tsp chili flakes

1 tbsp lemon juice

0.5 tbsp Japanese soy sauce

a little bit of black pepper

150 g halloumi

Cooked white rice

a few boiled asparagus

Soy beans

Pickled red onion

approx 10 cm zucchini

1 carrot

0.5 avocado

Sesame seeds

Chili flakes, can be excluded

HOW TO MAKE:

  • Combine all the ingredients for the marinade in a medium sized bowl. Thinly slice the halloumi and place them in the marinade, letting them soak in the marinade preferably for at least 1 hour, or if having the time, overnight too.

  • Heat up a non-stick skillet possibly with just a little bit of vegetable oil and fry the halloumi golden brown on each side. Add a little bit of the marinade over the halloumi, the rest can be used to the poké bowl.

  • Place your boiled rice to one side of the bowl. Next to it place the soy beans pickled red onion, spirulized zucchini and sliced carrot. Add the asparagus, sliced avocado and the halloumi.

  • Finish by topping with sesame seeds, a little bit of chili flakes and the rest of the marinade.
