Porridge with Coconut Fried Cinnamon Apple Slices

… but it was time to re-make and re-photo this old recipe of mine and make something new out of it. Because I really love this recipe. This is the kind of recipe that has that extra “fine touch” which makes it luxurious, but still is simple to make Because honestly, I most often like my food to be simple in the (weekday) mornings. There was a time I used to love to put lots of work and time into my breakfasts, but not so much anymore. I prefer finding hacks and recipes that make my breakfasts luxurious in a simple way! This porridge with coconut fried cinnamon apple slices is exactly that - luxurious and yet simple to make. Oh, and yummy to of course!

You can really top whatever porridge (or yoghurt) with these apple slices if you want to. They are so simple to make, soft and they literally just melt in your mouth when eating them. I will share the whole recipe - including the porridge.- in the recipe further down in this post though anyway. This combination of my porridge with the coconut fried cinnamon apple slices and oat milk, peanut butter and coconut flakes is just a perfection. I loved this so much!


THIS RECIPE IS:

  • Vegan

  • Gluten free (if picking gf oats)

  • Simple to make

  • Makes a boring everyday breakfast more luxurious and special.

  • Apples can be eaten over yoghurt or smoothie too


Porridge with Coconut Fried Cinnamon Apples

INGREDIENTS:

1 dl (40 g) oats

2.5 dl (1 cup) plantbased milk

a little bit of vanilla essence or a pinch of real vanilla powder

1 sweet red apple

approx 1 tbsp coconut oil

1-2 tsp cinnamon powder

HOW TO MAKE:

  • Place the pats in a small sauce pan with the milk. Bring to a boil and lower the heat so it simmers.

  • Add the vanilla and be sure that you stir around so the porridge gets creamy. Don’t let it cook for too long.

  • Slice your apple. Heat a frying pan with a little bit of coconut oil.

  • Place the apple slices in the frying pan and powder over some cinnamon powder. Fry until golden on both sides and the apples are soft.

  • Serve the porridge with the apple slices and if you want to, some more plantbased milk, peanut butter and coconut flakes.
