Potato Wedges with Zaatar

Bring some Zaatar into your life.

Today I want to take you on whole new food journey! This dish I’m gonna show you today is so simple to make and yet so delicious! I have seriously made this dish so many times already, and it’s already one of my favorite quick fix foods/dinners when I don’t have any inspiration on what to eat. I have taken various elements of the dish from the Middle East and North Africa. Ladies and gents, these are my potato wedges with zaatar. This is so delicious, and if you don’t have any idea of what zaatar is, let me explain that further down in this post.

What is Zaatar?

Zaatar is a mixture of herbs and spices from the Middle East and North Africa which is very popular. Zaatar can vary a bit depending on which country you get it from/ or taste it in, but today I’m gonna tell you about the Lebanese Zaatar.

Zaatar most often consists of thyme and/or oregano, sesame seeds and sumak. In the most simple way you eat the zaatar by dipping bread in olive oil and thereafter in the zaatar. You can also find zaatar on pita bread, pirogues and other dishes.

Where can I get zaatar?

You can either make your own zaatar (I will show you that in a different post) or buy zaatar in an ordinary traditional shop with oriental and /or Middle East foods. In Sweden you can also find this season gin in some "plain ordinary” super markets too. I have a big jar of zaatar home and I use it for so many things - if not least the potato wedges I’m gonna show you today.

Potato Wedges with Zaatar

INGREDIENTS:

approx 6 big potatoes

2 + at least 2 tbsp olive oil

1 big garlic clove

3 overfilled tsp Lebanese zaatar

Salt and black pepper

+ You can also add 1 carrot and 1 yellow onion if you'd like

HOW TO MAKE:

  • Heat your oven to 200 degrees.

  • Scrub and wash of your potatoes and cut them in wedges. (The potato is nicer when not peeling it).

  • Pour 2 tbsp olive oil into a baking sheet. Place the potato wedges into the pan. Spread on some salt and pepper, and be sure you take enough. Potatoes need salt.

  • Press the garlic into a bowl. Add remaining olive oil and zaatar. Stir all together thoroughly to a thick paste. Mix this with the potato - most easily massaging the paste with the potato with your hands.

  • Oven roast your potatoes in the oven for approx 50' (this can vary, depending on the oven).

  • Serve with optional protein, a nice salad and a dip like greek tsatsiki. This is so good!
