Simple Shakshuka

Shakshuka LOVE!

This dish is originally from Northern Africa, but has become a very popular and loved signature dish for countries even in the Middle East. Shakshuka is a tomato stew with eggs, that consists of just a few simple ingredients in combination with spicy and strong seasoning. This works just as great to eat for brunch as it does for lunch or a more simple dinner. Serve it with a nice piece of bread (lika pita bread) and hummus to get a whole authentic feeling of shakshuka.

This is a more simplified recipe of a traditional one

Traditionally, harissa is usually used in a shakshuka. Harissa is a thick red sauce from North Africa, consisting of for instance chili and garlic. We have chosen to make this recipe more simple and that’s the reason we use actual chili, garlic and cumin instead.

  • Great to eat either as a more satisfying breakfast/ brunch or as a lunch


Simple Shakshuka

INGREDIENTS:

Optional Cooking Oil

1/2 yellow onion

1 rather small garlic clove

1 tbsp tomato paste

1 ripped tomato

1/2 red, yellow or green bell pepper

400 g crushed tomato

1 tsp cumin

1 tsp sweet paprika powder

1-2 pinches of chili flakes

2-3 eggs

Fresh Parsley or Cilantro


HOW TO MAKE:

  • Heat a frying pan with a little bit of optional cooking fat. Finely chop the onion and fry it together with pressed garlic until soft.

  • Cut the tomato and pepper into cubes. Add the tomato paste first, combine and add the tomato and pepper.

  • Add the crushed tomatoes, the seasoning and combine everything together.

  • Crack the eggs in the middle of the pan. Cover with a lid and leave for a few minutes over medium heat. Check that the white is set before removing from heat.

  • Finely chop parsley or cilantro and serve that over the dish. Serve the dish preferably with some bread.
