Spaghetti with Italian Vegan Frikadelle and Tomato Sauce
It was just like a movie. It was just like a song.
With inspiration from Lady and the Tramp - Disney movie, I today want to give you this romantic Italian dinner! I think you understand what dish I’m talking about that movie right; the one where the dogs are sitting at the Italian restaurant and are eating spaghetti with tomato sauce and meat balls. That is the reason why I today want to give my own version of this famous, romantic, Italian dish. Here y’all, is my spaghetti with vegan frikadeller and tomato sauce!

Italian vegan frikadeller with tomato sauce and spaghetti
2-3 servings
INGREDIENTS:
2-3 portions of spaghetti, aprox 200-300 g
Frikadeller:
1 package, 250 g, kidney beans
1 onion
1 tbsp soy sauce
2 tbsp chopped parsley
1/2 dl rolled or gf oats
1/2 dl bread crumbs
1/2 tbsp olive oil
Salt and pepper
Tomato sauce:
1 can cherry tomatoes (approx 400 g)
1 can, a 400 g, crushed tomatoes
2 tbsp olive oil
1/2 grated onion
1 big pressed garlic cloves
1 tsp sugar
1 dl finely chopped parsley
approx 1 tbsp dried oregano
Salt and pepper
HOW TO MAKE:
Cook your pasta according to the directions.
Grate the onion thoroughly. Mix then all ingredients for the frikadeller in a mixer or with a stick blender. Mix thoroughly so a lump free mixture is made. It almost looks like minced meat, but possibly a bit lighter.
Place the mixture in the fridge so it sets for approx 10'.
Meanwhile you can prepare the tomato sauce. Place all ingredients in a sauce pan. Add a little bit of water too and boil it up. Taste with salt and pepper.
Roll balls of the bean mixture you have in the fridge. Heat a frying pan with cooking fat and fry your frikadelle until golden.
You can either pour over the tomato sauce on your frikadelle so the tomato sauce gives flavor to the frikadeller, or you serve the spaghetti with tomato sauce and frikadeller in three steps. Enjoy!
NOTES:
Use optional spaghetti - for instance ordinary, protein rich or gluten free.
