Spicy Chili Sin Carne

Fiesta. Siesta. Chili Sin Carne. Repeat.

Chili sin carne - chili without meat or vegan chili. That is what I want to give you today! This Mexican dish doesn’t only consists of lots of colors and flavors, it’s also very simple to make and very satisfying! This dish is usually made with meat (then it’s called chili con carne) but I really like this version without any meat. No doubt. It’s really delicious!

Add vegan minced meat - if you want to.

I have added a vegan substitut for the minced meat into this dish, to make this dish as similar as original chili con carne as possible. You can exclude the meat substitute if you want to and only go for the beans. The texture and flavor will obviously change a bit, but the beans are a great protein source themselves too and they’re satisfying.

There are very many substitutes for the meat in this dish you can use, as for instance vegan substitutes (for instance from Anamma) or vegetarian (for instance Quorn). I have definitely not tested all substitutes available out there (not even the ones available in Sweden) but since this dish has so much spices and flavor you don’t have to worry that the vegan substitute you pick might not have enough flavor as some hasn’t. The spices and flavors from the rest of the dish will do the job. You can either choose fresh or frozen “minced meat” for this dish. Both work.

Chili sin carne

approx 4 servings

INGREDIENTS:

1/2 yellow onion

approx 1-2 cm fresh red chili

1 pressed garlic clove

Olive oil for frying

400 vegan optional minced "meat"

1 tin crushed tomatoes

1 tin cherry tomatoes

1 tsp pepper powder

1 tsp cumin

Cayenne after taste

Salt and black pepper

1 tin with a mixture of boiled beans or kidney beans

+ You can also add 1/2 red pepper and 1/2 small tin of corn

HOW TO MAKE:

  • Finely chop your yellow onion and red chili.

  • Heat up a frying pan and fry your onion, chili and garlic until your onion is transparent.

  • Add your "minced meat" (if you want to have that) and fry until it's golden brown.

  • Add your crushed and cherry tomatoes. 

  • Add seasoning (+ the pepper cut into slices if you'd like) and stir together. Add a little bit of extra water and then let it simmer fr approx 10' under lid on low heat.

  • Rinse of your beans under cold water and add this. Taste off and see it it needs more seasoning.

  • Stir it all together in big takes and also add the corn if you'd like. 

  • Then serve, preferably with rice, nacho chips, corn, and parsley or coriander.
