Vegan Chocolate Nougat with Hazelnut

I could give up chocolate, but I’m not a quitter.

If you have been looking for the perfect chocolate nougat recipe which completely melts in your mouth and contribute to a taste sensation - yes, here you’ve got it! These small nougat balls might look innocent but as soon as you taste them you will want to eat even more. Some of these nougat balls are even filled with hazelnuts, so those of you who like to get some delightful extra “crunch” when you bite in the soft nougat/chocolate. Then this is something for you too!

What kind of chocolate should I use?

You decide which kind of chocolate you'd like to use (what % of cacao), but if you use a very dark chocolate there's a chance you have to add a bit more of sweetening of choice. I use a vegan 70% dark chocolate which is sweetened with stevia.

Chocolate Nougat

INGREDIENTS:

50 g dark chocolate

30 g almond butter

2 tsp coconut sugar, stevia or sweetening

3,5 tbsp hazelnut or almond flour

a pinch of real vanilla 

a pinch of sea salt

+ hazelnuts and approx 100 g of optional chocolate for the coating



HOW TO MAKE:

  • Mix around all ingredients thoroughly and place in the fridge for approx 10 min.

  • Roll rather small balls of the dough (they are very rich, so that's the reason I recommend smaller balls). If you want to you can also place a hazelnut in the center of the nougat.

  • Place in the fridge for 10’. Meanwhile melt your chocolate in a bowl over hot simmering water.

  • Dip in chocolate and let set on a baking sheet, preferably in the fridge. Dig in!
