Bali is always a good idea

… But still, I haven’t been there. My açaí bowl and golden coconut nice cream bowl are the closest I’ve ever felt on being on Bali . They’re amazing and now when it’s time for summer we better make ourselves two bowls of this. These bowls are extremely beautiful and yet so delicious, healthy and joyful. Grab yourself a spoon and dig in!

Vegan Raw Acai Bowl och Golden Coconut Bowl

INGREDIENTS FOR GOLDEN COCONUT BOWL

1,5 big frozen bananas

2 tbsp coconut milk (the thick part)

2 tbsp coconut water (you can use the water from the coconut milk can)

2 pitted dates

1 pinch of real vanilla powder

1 tbsp mesquite powder

INGREDIENTS FOR ACAI BOWL

2 big frozen organic bananas

2 tbsp coconut milk (the thick part)

2 tbsp coconut water (you can use the water from the coconut milk can)

1 dl frozen blueberries

1 pinch of real vanilla

1 tsp açaí powder

HOW TO MAKE IT

  • Mix the ingredients for the açaí bowl thoroughly to an ice cream texture. There’s a possibility you have to keep mixing it for a few minutes. Serve in bowl and garnish with kiwi, passion fruit, blueberries, blackberries, banana and coconut flakes.

  • Thereafter, mix the ingredients for the golden coconut bowl. to an ice cream texture. There’s a possibility you have to keep mixing for a few minutes. Serve in a bowl and garnish with dates, figs, kiwi, coconut flakes and coconut fried banana.


NOTES:

  • How to make the coconut fried bananas: simply heat up coconut oil in a frying pan. Powder some cinnamon on bananas cut length wise, and fry the banana until golden on each side.

  • All ingredients I have used in this recipe are organic.
