Vegan Gluten Free Apple Cake Pancakes

You, me, Sunday morning and Pancakes!

When you have a craving for apple cake and it's early in the morning, create apple cake pancakes. One of my best ideas in a while for sure, and these delicious pancakes were eaten quickly let me tell you that. This is so simple to make but yet this breakfast becomes so luxurious and something entirely new to taste for breakfast. If you want impress anyone with your breakfast skills, then you better make them these pancakes! ;)

Vegan and gluten free?

This recipe is completely vegan and gluten free. You can also use ordinary white wheat flour for the pancakes but then they obviously don't become gluten free.

What kind of apples should I use?

Preferably use hard red sweet apples for this recipe. Also organic if you have the possibility. I used Swedish apples for this recipe which taste fantastic together with the various spices. This in combination with the pancake batter and vanilla custard sauce turns out very delicious.

Apple Cake Pancakes

INGREDIENTS:

3 relatively smaller apples (approx 350-400 g in total)

1,5 tsp cinnamon 

1/2 tsp ground ginger

1/2 tsp cardamom

1 tsp coconut oil 

approx 1 tbsp agave syrup

Optional pancake batter or this:

90 g buckwheat flour or gf basic flour (wheat flour works too)

1 tbsp corn starch

1,5 tsp baking powder

1 tsp agave syrup or maple syrup

a pinch of real vanilla

1/2 tsp cinnamon

120 ml (1,2 dl) vegan milk

+ optional cooking fat for frying

HOW TO MAKE:

  • Chop your apples to smaller cubes. Combine cinnamon, ginger and cardamom together in a small bowl.

  • Heat a frying pan with coconut oil and place the apple cubes in it and fry. Spread over the seasoning and ripple over some agave syrup. Combine all together with a spatula and fry until soft and golden.

  • Make optional vegan pancake batter - like mine.

  • Mix together all the dry ingredients in a bowl. Add the liquid and mix thoroughly until a lump free batter is made.

  • Heat up a frying pan with cooking fat. Pour a little bit batter into the pan and place a few pre fried apples on top. Press down the apples a little bit so that they don't fall off. After a few second, as soon as bubbles have been created on top, you can flip the pancakes carefully and fry them for approx 20 s on the other side.

  • Do this with the whole batter and serve as a stack with the remaining apples (if you have any left) with agave syrup and custard sauce.
