Vegan Green Pea Pasta Pesto

Pasta pesto; a green but oh so delicious dish that was actually one of my favorite dishes when I was younger. My mom used to make it to me and my sister and we loved it so much. This pasta pesto is a bit different…

… because it’s not made in the traditional way with pine nuts and parmesan cheese. This one is instead made with frozen green peas. Yes, it’s true, and the results turns out amazing for real. Green peas are so amazing and a great substitute for the nuts if being nut allergic and the parmesan if being vegan. Just keep on reading to learn more.

Is vegan pesto really a cheaper pesto?

When using green peas instead of pine nuts and parmesan cheese - two ingredients that are usually not consider being “cheap” -, green peas are definitely a lot less pricey. It’s cheaper to make this food and yet it’s very delicious! This pesto can be served just as other pestos are served; with pasta, on bread, in salads, on some protein sources etc.

Which kind of pasta should I pick?

There are endless of variations of pasta and most sorts suits with pesto. My mom used to make pasta pesto with fresh pasta, which most often was cheese or spinach filled tortellini or ordinary fettuccine. Fettuccine is still today one of my favorite kinds of pasta for pasta pesto but also spaghetti or pappardelle suits very well.

PS. you can also pick gluten free pasta or bean/ lentil pasta to get it gluten-free or protein rich.

For whom is the pasta pesto?

Like I had written in an older pasta pesto post, “this dish is really great for families with kids where you want something simple with rather neutral - but not tasteless - flavors to make for the kids. It is also very suiting for people (most often students) who can have limitations on money and want to save in on for instance food. It’s also very suiting for the one who works very very much, and don’t have time to spend on cooking food for hours and prefer to have something simple to make. This is however also very good everyday food or lunch box food to bring with your to uni or work, as it is to serve a Friday evening when you have a date and want to serve something delicious to your partner or “soon to be”. Pasta pesto is with other words, something for everyone!”


THIS RECIPE IS:

Green Pea Pasta Pesto

2-3 servings

INGREDIENTS:

2-3 servings of optional pasta

2 dl (0.8 cups) frozen green peas

75-100 ml olive oil

1 garlic clove

a bunch of fresh basil

2 tsp nutritional yeast, can be excluded

0.5 tsp salt

A little bit of black pepper


HOW TO MAKE:

  • Boil the pasta according to the instructions on the package.

  • Mix all ingrediens until creamy. Add more olive oil until it gets the consistency you like. Personally I like it when my pesto is a bit thicker.

  • Rinse off the pasta in cold water a little bit and then combine the pasta with the pesto. Serve straight away, if you want to, with a little bit of extra fresh basil, sesame seeds and nutritional yeast or a little bit of sea salt.
