Oatmeal with Coconut Fried Banana, Peanut Butter and Dates

Happy new month everyone! How crazy is it that we have officially welcomed November, and the second last month of this year? This year has probably been the craziest and most sh*tty year in many aspects, but I am a firm believer that I don’t want to end these two last month of the year in a negative way. Let’s get thru this dark November by cheering it up with - at least - some joyful and delicious food… like a delicious breakfast of vegan oatmeal with coconut fried bananas!

Coconut Fried Banana is THE BEST

Seriously, if you haven’t ever tasted coconut fried banana, like O M G. This simply made recipe for oatmeal, smoothies, yoghurt or… just eating like it is, straight from the frying pan into your mouth (totally ok, I don’t judge), is so delicious! You only need three ingredients to make these bananas and they taste so luxurious. It’s crazy delicious and a simple cooking tip you need in your life!

What exactly have I made for breakfast?

Yes, so you might wonder what I have made for breakfast. I have made a simple vegan vanilla oatmeal which thereafter is garnished overload with: the coconut fried bananas, peanut butter, dates, oat milk, coconut yoghurt and agave syrup swirl, sesame seeds and cinnamon. Yes, I have pushed this a lot and it’s so good, but don’t freak out, you don’t have to have every single garnishing I had on my oatmeal on yours too. I recommend you to add peanut butter, cinnamon and oat milk to your coconut fried banana though. They suit very well together with the oatmeal.

If you don’t like my oatmeal…

… you can just skip my oatmeal and make your own optional porridge. I’m just giving you an example in the recipe below of what oatmeal you can make to serve your bananas.

Oatmeal with Coconut Fried Banana

INGREDIENTS:

1 dl (40 g) optional oats

2,5 dl plant based oat milk

a pinch of real vanilla powder or a few drops vanilla essence

1 tsp agave syrup

1 big banana

approx 1 tbsp coconut oil

approx 2 tsp agave syrup or maple syrup

Cinnamon

Possibly a pinch of sea salt

HOW TO MAKE:

  • Place the oats in a small sauce pan with the liquid, vanilla and syrup. Bring to a boil while stirring for 1-2 minutes. When the water is absorbed and the porridge is thick, it’s done.

  • Slice the banana. Heat a frying pan with some coconut oil and fry the banana. Power over some cinnamon and fru until the banana is soft and golden brown. If you like sweet + salt, you can also add just a little bit of sea salt to the bananas. It’s good.

  • Garnish your oatmeal with the banana slices, peanut butter, dates, more plantbased milk or other optional garnishing
