Vegan Oreo Peanut Butter Pie with Salted Peanuts

If you have been looking for a dreamy dessert pie, than you have found it right here! This pie is something beyond the ordinary having a greta balance of sweet and salty, with a crunchy crust, a soft middle part and a taste sensation straight through. This my dear friends, is my Oreo and peanut butter pie. Honestly, it’s a bit scary making dessert like these when there are so many things going on at the same time. In Sweden we usually have a lot more “simple” desserts, while this American inspired dessert is very rich, but yet so delicious and perfect. This is a dessert for both kids and adults!
Did you that Oreos are vegan?
Yes, Oreos are actually vegan! I had heard about this a long time ago but was still not sure. It just was too good to be true for some reason. This made me wait a long time before making a recipe with Oreos but now it’s here. A fantastic vegan Oreo recipe that will make you drool! Deeply recommended.

Oreo and Peanut Butter Pie
INGREDIENTS:
2 packages of double stuff Oreos, in total approx 310 g
100 vegan butter
Filling:
the filling from your Oreos
150 g creamy peanut butter
10 g vegan butter
½ dl coconut sugar, white sugar or sweetening
a pinch of real vanilla
Chocolate Sauce:
75 g dark chocolate
15 gr peanut butter
1 5 g melted coconut oil
HOW TO MAKE:
Take your Oreo-cookies and scrape of the white filling and place it in a separate bowl (it will be used for the filling).
Place the dry dark cookies in a blender. Mix to crumbs.
Melt your vegan butter in a bowl and stir down your Oreo-crumble to a sticky dough. Press out this dough in a pie pan. Place in the freezer while making the filling.
Mix the filling from the ores, with peanut butter, vegan butter (NOT melted), coconut sugar and vanilla to a creamy mixture. Be sure the filling of the Oreos and the butter is mixed well so no lumps are left.
Spread out this layer on the crust and place in the freezer for an hour.
Melt your dark chocolate in a bowl over hot simmering water with the coconut oil. Stir down the peanut butter to a chocolate sauce. Spread this over the peanut butter filling and place in the freezer again.
Store in the freezer until you want to thaw it and serve, or let it be in the freezer for 45'. Garnish with chopped peanuts and possibly some more Oreo crumbs.
