Vegan Rainbow Vegetable Bowl

Be a rainbow in someone else’s cloud.

The more color to the food, the more joy for your eyes. This is not a quote. It is probably not scientifically proven either. I just came up with this! But really, don’t you get a lot happier seeing this kind of food? So this is my rainbow bowl y’all. My delicious and colorful rainbow bowl I want to tell you about today.

What does a rainbow bowl consist of?

A rainbow bowl is really just a bowl or plate with a salad or colorful vegan healthy ingredients in various colors. My rainbow bowl today consists of mashed purple potatoes, oven roasted spicy cauliflower, Palestinian falafel, tomato cubes, cucumber cubes and fresh parsley. I added a dressing to this and honestly, this was the best I had eaten in a long time.

So what do you want me to give you the recipe of today?

The falafel is unfortunately not mine. It’s my hubby’s mom, who is from Palestina, who had prepared them and then I just fried them. This means I can’t give you this recipe… at least not yet.

The vegan mashed potatoes are very simple to make. You simply just boil the purple potatoes until really soft. Mash them thoroughly with a fork. Add a little bit of optional plant based milk, salt and white pepper. Combine. You’re done! So, let me show you the recipe of the cauliflower instead.


THIS RECIPE IS:

Roasted Spicy Cauliflower

INGREDIENTS:

1 head of cauliflower

1 tsp paprika powder

1 tsp cumin

1/2 tsp cayenne pepper

1/2 tsp black pepper

1 tsp oregano

1/2 tsp thyme

1 pressed garlic clove

1 tsp salt

approx 1/2 dl olive oil

HOW TO MAKE:

  • Heat oven to 220 degrees. Place a baking paper on a baking sheet.

  • Cut the cauliflower into smaller bouquets.

  • Mix all ingredients for the marinade (it’s all ingredients except for the cauliflower). Add more olive oil if needed.

  • Rub the cauliflower bouquets with the marinade. Roast in the oven until soft and it has gotten color, for approx 15’.
