Vegan Spicy Red Lentil Stew

Just Chili(n), eating Chili.

I’m a bit extra excited to show you this recipe today, because today y’all I’m going to show you one of my favorite recipes! This is a recipe of something I have made extremely many times at my place, which has influences from countries and food cultures all around the world (Italy, Middle East, India and more), which is completely vegan and so simple to make. And obviously - also delicious! I love this dish and the dish I’m talking about is my hot spicy red lentil stew!

This stew is…

This stew is completely vegan and gluten free. You get the proteins from the red lentils and the flavor is from the spicy seasoning, the garlic, chili and then - the fresh herbs. I love my vegan spicy red lentil stew so much and it is best served with basmati rice or in homebred lavash pita bread.

Hot hot hot.

This stew is spicy and hot and can be seen as too hot for people who are a bit sensitive. Preferably decrease the spicy seasoning (chili, garlic, cayenne) for a start and add more if you think it’s needed afterwards.


THIS RECIPE IS:

  • Can be eaten with either rice or in bread, as a wrap


Spicy Red Lentil Stew

approx 4-5 servings
INGREDIENTS:

1/2 yellow onion

max 1 cm fresh red chili

1 pressed garlic clove

Olive oil for frying

1 tin crushed tomatoes

1 tin cherry tomatoes ( or two crushed tomatos)

1 tsp pepper powder

1 tsp cumin

1/2 tsp Cayenne after taste

Salt and black pepper

1,5 dl dried red lentils

Herbs, like fresh basil or dried oregano


HOW TO MAKE:

  • Finely chop your onion and red chili.

  • Heat up a frying pan and fry your onion, chili and garlic until your onion is transparent.

  • Add your crushed and cherry tomatoes. 

  • Add seasoning and stir together. Add a little bit of extra water and then let it simmer for approx 10' under lid on low heat.

  • Rinse of your dried lentils under cold water and pre boil them for approx 5'. Add them to the stew and let them get soft in it. Taste off and see if the stew needs more seasoning.

  • Stir it all together in big takes and at last add your fresh basil.

  • Then serve preferably with rice. And I love to garnish this stew with (vegan) feta cheese. Tastes so so good.
