Blue Cheese Phyllo Dough Pie
You can’t make everyone happy - you aren’t Blue Cheese Phyllo Pie.
I have grown up with the Greek culture and food culture since as long as I can remember. Something I have eaten already as a child, was the traditionally known phyllo dough pies/pitas in Greece, filled with feta cheese and/or spinach. I’ve always felt I have been wanting to give you this recipe, so it feel a bit ironical I’m not giving you the traditional greek phyllo dough recipe but something else. It’s extra, so delicious though, and something you really should try. It’s crispy on the outside, but of so soft and full of flavor on the inside. This you all, is my Blue Cheese Phyllo Pie!
What cheese should I use?
In this recipe I have used a traditional blue cheese in combination with a milder white “blue” cheese. The combination is fantastic, and when using the more mild cheese with the blue traditional one, it' just gets perfect.
Don’t throw the broken or ripped pieces of the phyllo away
It’s not uncommon getting phyllo sheets that are ripped or possibly broken into smaller pieces sometimes. Don’t throw these away though! You can either “glue” the sheets that are ripped together with olive oil or make phyllo sticks out of smaller pieces. You simply just brush on olive oil on the pieces, roll to sticks and then bake in the oven for approx 15’ or until golden. Then, dig in!

Blue Cheese Phyllo Dough Pie
INGREDIENTS:
1 package (500 g) of Greek phyllo dough
220 g of Blue Cheese
140 g of Mild white “Blue” Cheese
Olive oil and/or butter
HOW TO MAKE:
Heat oven to 200 degrees C. Brush out a thin layer of olive oil or butter in a round baking pan.
Mash the two cheeses using a fork. Combine them together with a little bit of olive oil, to a creamy mixture.
Spread out two phyllo sheets on top of each other and brush on some olive oil. On the long side of the phyllo sheet, spread out a thin layer of the filling and start by rolling the sheet away from you, lightly pressing, so that the filling is packed.
Roll the phyllo doing into a spiral and place it in the center of your round baking pan. Keep doing these phyllo dough rolls with two sheets and olive oil until you have used all the filling. Roll each roll around the spiral until the spiral gets larger.
When all the filling is done, Brush on some olive oil on top of the pie.
Bake in the oven for approx 45’ or until golden brown.
