Chocolate Truffles - Vegan, 3 Ingredients and No Sugar
It’s beginning to look at lot like Christmas.
Sorry to those who are not ready for Christmas, but it’s time for this year’s first ever Christmas recipe! A recipe so loved and appreciated by many and a recipe I have been dying to show you all. These chocolate truffles are absolutely fantastic, and also vegan, gluten free and sugar free only made with three ingredients. If you have ever thought that chocolate truffles only can be made with dairy (whip cream) and sugar, I today want to show you the other possibilities. I am so happy to share this recipe with you all today. These Chocolate Truffles are so rich, and the texture is so creamy and perfect.
PS. those of you who feel like “oh gosh, not Christmas recipes already” don’t worry. This is a recipe that you can make no matter time of the year it is.
What about sugar free?
You can choose whatever brown chocolate you want to use when making these chocolate truffles. If you are picking a sugar free chocolate then the truffles also become sugar free, but if that’s not a preference of yours its of course, totally ok to just pick an “ordinary” chocolate. I recommend you though to pick a rather dark one no matter if you pick a sugar free or not.
Chocolate Truffles
approx 10 pieces
INGREDIENTS:
1,5 dl (150 ml) Plant based Whipping Cream
150 g optional "brown" chocolate*
a very small pinch of sea salt
Steviadrops if needed**
HOW TO MAKE:
Boil up the cream in a small sauce pan. As soon as it starts boiling remove the pan from the heat and add the chocolate to the cream.
Stir it around with a spoon until the chocolate has melted thoroughly and no lumps are left. Add the small amount of salt and mix.
Place in the fridge until the chocolate mixture is set, for approx 1 hour.
Scoop out balls of the mixture. Roll them in for instance cacao, lingonberry powder, gingerbread or nuts if you'd like and then place them on a baking sheet.
Store them in fridge until set and serving.
NOTES:
Do not use white chocolate*
If you are using a very dark and bitter chocolate that isn’t sweetened, you will possibly need to add some stevia drops to the mixture too.
