Healthy Vegan Chocolate Salami

Anything is good if it’s made of chocolate.

Ok don’t freak out by the look of this recipe. I know many of you might think “oh no, does she already start with Christmas recipes?”, but this was honestly not supposed to be connected to that at all. I just liked the thought ot a chocolate salami (roll that on your tongue and see how delicious that sounds huh? ;) ) and made this deliciousness. Then it’s just a coincidence we’re so close to Christmas and some people (ok, me too) are already super excited about it. But who’s ready fro some chocolate salami, that you can eat no matter time of the year?!?!

Endless variations possibilities

You probably know by now, at least if you’ve followed me fore a while, that I love to give you recipes that have endless of variations; recipes that are rather simple to make but yet you can add your own “touch” to it if you want to. This is one of those recipes. I have filled my salami with walnuts, hazelnuts, dried fruits and digestive, but you can use so much more or ELSE if you want. That can be ingredients like:

Healthy Vegan Chocolate Salami

INGREDIENTS:

1.75 dl (0.7 cups) coconut cream

180 g high quality dark chocolate

10 g of coconut oil

50 g walnuts or hazelnuts

30 g dried fruits and berries like raisins, cranberries etc

3 sugar free digestive or more nuts and dried berries

a small pinch of salt


HOW TO MAKE:

  • Chop the nuts, biscuits and possibly dried fruits and berries to smaller pieces.

  • Bring the coconut cream to a simmer in a small sauce pan. Add the dark chocolate and coconut oil to the sauce pan and stir it all around so the chocolate and coconut oil melts together with the cream.

  • Add the biscuits, dried fruit and nuts to the chocolate mixture and mix until combined.

  • Set the mixture aside for approximately 20 minutes, until it has set enough to hold its shape well, but hasn't become so solid to that you can't mould it.

  • Cut a piece of baking paper about 15-20cm wide. Spoon the mixture lengthwise onto the centre and then use a spatula to form it into a rough salami shape.

  • Fold the bottom edge of the baking paper up and over the mixture and roll it into the paper. Gently press with your hands to get smooth surface and round salami shape. Twist the ends of the paper together at each end.

  • Place the chocolate salami in the fridge for at least 1 hour or until set.

  • Unwrap and dust with icing sugar or sugar free substitute on all sides.

  • Slice, serve and enjoy!
