Gingerbread Spice, Everything Nice!

We are getting closer to one of my absolute favorite months of the year - and probably this year - and one step closer to THE Christmas too! Now is the time for me to show you one delicious vegan, refined sugar free treat and no bake Christmas sweets. Those of you who don’t know, bounty is a coconut mixture covered in chocolate very known worldwide and that can be found in most supermarkets. Today I want to talk about my delicious gingerbread flavored, no bake bountys! So delicious!

THIS RECIPE IS:

  • Vegan

  • Gluten Free

  • Without added refined sugar

  • Great Christmas sweets

  • Delicious gingerbread flavored


Gingerbread Bounty

approx 6 pieces

INGREDIENTS:

6 big dates
1/2 dl boiled water
1,5 dl coconut flakes

1 tsp coconut oil

3/4 tsp gingerbread seasoning

a pinch of salt

approx 100 g dark chocolate


HOW TO MAKE:

  • Mix your dates and the water in a food blender or with a stick blender to a thick sauce.

  • Add the coconut, coconut oil and all seasoning. Mix again to a dough.

  • Form the dough into small oval, date alike, shapes with your hands. Place them on a baking sheet. Place the in the freezer for at least 10’ while melting your chocolate over waterbath.

  • When the chocolate is melted, dip the bountys into the melted chocolate. Let them set on a baking sheet in the fridge.
