Healthy Banoffee Parfait

Just a girl who decided to go for it - The Banoffee.

Did I really say this? Yes, I said Banoffee Parfait, or in other words - “Walnut Butter Banana Whip Cream Parfaits” which is totally all about those layer, which is totally extra and which is totally fantastic! I AM in love with this and this is something I’ve been dying to make. It really doesn’t go wrong when combining banana, caramel, whip cream, crunch, walnuts, dates and much much more into one right? You better try this one out! It’s completely vegan and sugar free too. Yay for this!

So… is this a dessert or breakfast?

Well, since it consists of yoghurt AND granola it is definitely suiting for breakfast, but I’d say it’s for a more special occasion or festive breakfast or brunch. Let’s say you have a birthday brunch with your friends - then this is soooo suiting! But this doesn’t mean that this banofee parfait doesn’t work for dessert too! Because it also consists of caramel sauce and whip cream, so you can really serve it as dessert too. It’s all your own preference, what you like and what you’d like to eat it as. Banoffee parfait really never goes wrong. Just go for it, and enjoy all of this sugar free healthy deliciousness!

Healthy Banoffee Pie

INGREDIENTS:

1 organic banana

4 tbsp cinnamon granola

4 tbsp vegan thick “Turkish/Greek” yoghurt

a few stevia drops or a little bit of agave syrup

a pinch of real vanilla powder

approx 3 tbsp vegan whip cream

agave syrup or maple syrup for garnishing

2-3 walnuts for garnishing


Caramel sauce:

0,75 dl (1/3 cups) pitted dates

2 tbsp walnut butter or peanut butter, can be excluded if nut allergic

0,5 dl (0,2 cups) plant based milk of choice, preferably oat milk

a pinch of salt

a pinch of real vanilla powder or 1/2 tsp vanilla extract

HOW TO MAKE:

  • Start by making the caramel sauce: blend all ingredients for the caramel sauce thoroughly, until creamy and lump free.

  • Pour the sauce into a sauce pan and heat it while stirring over a low flame for at least 5’ until it has thickened. Let it cool.

  • Slice the banana and place a few of the slices in a glass. Add granola on top.

  • Combine the thick vegan yoghurt with stevia drops (or syrup) and vanilla. Layer this on top of the granola.

  • Cover the yoghurt with a few slices of more banana and spread on a layer of the caramel sauce. Add, if you want to, another layer of bananas on top.

  • Whip your vegan whip cream and end your parfait with that. Garnish with some banana slice, walnut crunch and agave syrup too if you want too.
