Spicy Mexican Nacho Pie

If you can’t go to Mexico, bring Mexican food to you.

If you are going to have a party, then here is THE party recipe you have been looking for. Sweden and Mexico don’t have much in common, but Swedes really love the tacos and Mexican food. It felt more than suiting to give you a Mexican-inspired fiesta recipe today then, that will really take your party to a whole new level.

This is luxurious, rich, spicy, cheesy and so delicious. I am one of those who really love Mexican food, so instead of making the ordinary boring Swedish taco (yes, in Sweden we eat so much tacos that people have been starting to call our tacos in Sweden, “Swedish tacos”) I’m giving you this Mexican Nacho Pie!

What about meat?

Yes, Mexican food is known for often having meat included, but it is also known for having other protein sources - like beans. If you want to add something “meat-alike” there are plenty of vego option for minced meat. In Sweden we have vegan minced meat - both frozen or fresh - which are great to use in recipes like this one. So if you for some reason don’t think this pie is satisfying enough, you can also add veg minced meat in layers with the rest of the ingredients. You simple just fry the minced meat with taco spices, garlic and some tomato puré, and thereafter add the minced “meat” after the taco sauce but before the cheese sauce. The pie is already very rich and satisfying, but you make it even more when adding the minced meat.

Invite to a party!

This pie is so greet to offer when having guests coming over. This is fun, colorful, delicious and works for most people in taste. You can have it for something more festive, like a party, or even something cozier like a girl’s night or movie night with your partner.

Can I prepare it since before?

Yes, what’s best with this recipe is that you can prepare the pie crust since before. Make/bake the pie crust, keep it in the pie pan and cover it with plastic foil. This means you make the pie crust the day before and then add the fillings on the day of serving. It simplifies the process a lot.

Spicy Mexican Nacho Pie

INGREDIENTS TOPPING

1 tomato

1/2 jalapeno

½ red onion

Approx. 8 cocktail tomatoes

Approx. 1,5 dl dl medium or hot taco sauce

A small bag (approx 180 g) Nacho chips

approx 1 dl grated cheese

A small can of corn

Fresh coriander

INGREDIENTS CRUST

3 dl plain wheat flour

125 g lactose free or dairy free butter

2 tbsp cold water

INGREDIENTS CHEESE SAUCE

1 tbsp plain wheat flour

1 dl lactose free or plant based milk

1 dl grated optional yellow cheese, for instance gouda

 

HOW TO MAKE IT

Start with the crust

  • Pinch together the flour with the butter by hand, or mix it into a mass in a food blender. Add water and work it with your hands to a dough.

  • Press out the dough into a pie pan and prick the crust using a fork. Let it rest in the fridge for at least 15 minutes. Heat oven to 225 degrees C.

  • Then pre-bake the crust in the oven for 10 minutes. When done, let it cool.

And now on to the cheese sauce and then topping!

  • Heat your oil in a skillet. Add your flour and whisk with a hand whisk. Add your milk and start mixing. At last add the grated cheese and mix until thicken.

  • Spread out a layer of the cheese sauce in the pre-baked crust.

  • Cut the tomato into thin slices and finely chop the jalapeno, and place it on top of the taco sauce. At last, pour over the cheese sauce on top of the whole pie and place the pie into the over for approx 10’.

  • Take out the pie from the pie and garnish - in layers - with the nacho chips, more grated cheese, more taco sauce, thinly sliced red onion, cherry tomatoes and corn. Place the pie in the oven one last time, only for approx 5 minutes, so that the cheese just has melted.

  • Garnish with coriander and serve directly when it’s still hot, preferably with a big spoon of guacamole.

NOTES

  • You can also add avocado or guacamole, kidney beans, vegeterian minced meat and/or any other ingredient you’d like to this recipe.
