Mushroom Pie with Feta Cheese and Thyme
I can smell autumn dancing in the breeze.
My mom used to make pies to me and my sis since we were kids. Pies have therefore always been something that brings nostalgia and so many wonderful memories to me when making and eating one. That is the reason why I today want to give you a delicious pie you have never seen before. This is a savory pie perfect for more festive occasions, when having many guests coming over and offering for instance a buffet, or when you just want to create something a little bit more special for yourself.
Because now when it’s autumn I wanted to create a recipe that was suiting for these time. I’m obviously talking about mushrooms, because what is more connected to autumn than mushrooms. In Sweden we have the possibility of going into the woods and collect various mushrooms if we want to, but today I’m giving you a recipe that includes rather simple mushrooms most super markets (probably worldwide) have. I am absolutely in love with this mushroom pie. It’s so delicious when being combined with feta cheese and thyme. Yum!

Mushroom Pie with Feta Cheese and Dried Thyme
INGREDIENTS CRUST
125 g room tempered butter, in cubes
3 dl plain wheat flour
2 tbsp cold water
INGREDIENTS FILLING
1 yellow onion
400 g white button mushrooms or 300 g white button mushrooms and 100 g porcini mushrooms
½ red pepper
Butter and olive oil for frying
Sea salt
Black pepper
Approx 2 tsp dried thyme
1 dl cooking cream
1 egg
2 dl grated yellow cheese, like gouda
100 g feta cheese
HOW TO MAKE:
Start with the crust
Pinch together the flour with the butter by hand, or mix it into a mass in a food blender. Add water and work it with your hands to a dough.
Press out the dough into a pie pan, approx 24 cm, and prick the crust using a fork. Let it rest in the fridge for at least 15 minutes. Heat oven to 225 degrees C.
Then pre-bake the crust in the oven for 10 minutes. When done, let it cool.
Let’s get to the filling
Finely chop your onion and slice your mushroom and pepper. Heat up a frying pan with 50/50 butter and olive oil and fry your onion, mushroom and peppers soft.
Season with sea salt, black pepper and thyme.
Whip your cooking cream and egg together in a bowl. Grate your yellow cheese.
Spread out the mushroom mixture on to the pre baked crust. Pour over the white egg “sauce” and thereafter the yellow cheese. End by crumbling the feta cheese on top of the pie.
Bake the pie in the oven for approx 30’ until the pie is set and it has gotten som color.
Before serving, spread on top some extra sea salt and thyme.
