No-Bake Brownie Bites

Listen up, y'all, 'cause this is it. The brownie that I'm eatin' is de-li-cious.

Ok, the lyrics from Fergie’s song “Fergalicious” doesn’t go exactly like that, but it’s close enough and I am honestly having my own brownie-lyrics on repeat while eating my delicious No-Bake Brownie Bites today! These brownie bites are so simple to make. You really just need to mix the ingredients In a blender, spread it out in a pan and then dip the bites in melted chocolate. The recipe is also sugar free, vegan and gluten free, and it’s so suiting for us who love to eat small bites of sweets. I am 100% one of those people who loves sweets like this. Make these brownie bites y’all. Have them stored in the freezer and eat when you need a little bit of chocolate in your life!

Important to know before getting started!

When making pretty much all raw food desserts and no-bake desserts where dates are included, be sure you use soft dates. Soft dates are so important to use both for texture but also for its sweetness. Soft dates are like glue and are making the dough a lot more sticky and at the same time, soft dates are a lot sweeter than dry one. So before getting started, be sure you use really soft dates!

THIS RECIPE IS:

No-Bake Brownie Bites

INGREDIENTS:

150 g pitted soft dates

180 g peanut butter

3 tbsp cacao

4 tbsp grated coconut

a pinch of salt

150 g of optional chocolate + possibly just 1/2 tsp coconut oil

+ Sea salt or grated coconut for garnishing if you want

HOW TO MAKE:

  • Place all ingredients in a blender and mix until the ingredients are well combined, and when pressing the dough between your fingers it feels chewy and sticky. Depending on the mixer, you might need to stop the mixer now and then, stir around with a spoon and then mix again.

  • Line a small baking pan and press out the dough. Dip your fingers in a little bit cold water if necessary, so that the dough don’t stick onto your fingers.

  • Place the brownie in the freezer for at least 1 hour.

  • Melt the chocolate preferably over water bath. I always add just a little bit of coconut oil to chocolate if it’s used for coating because the coconut oil makes the chocolate a lot easier to work with.

  • Cut the frozen brownie in small bites and dip the bites in the melted chocolate. Place the bites on a lined plate.

  • Top with a little bit of sea salt or grated chocolate if you want to, and let the brownie bites set in the fridge for approx 10’
