Little by Little, a Little becomes A Lot.

This is one of those recipes I made out of leftover bulgur I had in my fridge. Honestly, I love making new food out of food I already had in my fridge. It’s like someone is challenging me saying “pff, will you be able to do a delicious dinner out of this? Leftovers? Don’t think so!” while I’m responding “Oh please, watch me!”. That is me, every single time in the kitchen when making something completely new... I sound a bit crazy for talking to myself, but it works because then at least I come up with some really delicious, dope recipes!

So today I want to talk about my bulgur fritters! They are honestly so delicious and they are great to have included in your lunch box you have with you to uni, work or when needing food straight after gym. These are completely vegetarian and a great source of both fibers, slow carbs, healthy fats AND proteins. You serve them really the way you want; in a big delicious salad, in a wrap, with potatoes or included in a meze/tapas style dinner? Also delicious to dip these into a yoghurt-dressing of some kind. You choose! They’re delicious no matter!

Less leftovers

There’s not many things I hate as much as throwing away food, for real. My heart breaks just a little bit every time I need to throw away food because I believe we in the more modern countries take food for granted so much. That is also, whenever I have for instance leftover food of various kind in the fridge or maybe damaged or a bit sad vegetables and fruits, why I always try to make something out of the food I have. I think we humans have a responsibility and taking advantage of the food you have is actually not that difficult. See it as a challenge. Challenge yourself to decrease your food waste by for instance not buying too much food so that you need to throw away the food because you haven’t eaten them in time, or taking advantage of the food by making new recipes out of leftover food and ingredients you already have.

Little by little, a little becomes a lot of food waste. But little by little change, makes a big change too.

THIS RECIPE IS:

  • Vegetarian

  • A great source of carbs, fats and proteins

  • Great when having leftover ingredients like bulgur, some cheese or carrots

  • Simple to make

  • Full of flavor

Bulgur Carrot Fritters

INGREDIENTS:

3 dl (1.2 cups) boiled bulgur

2 dl (0.8 cups) grated carrot

80 g feta cheese, halloumi or mozzarella

2 tbsp corn starch

1,5 tbsp sweet chili sauce

Salt and black pepper

Olive oil

HOW TO MAKE:

  • Heat oven to 225 degrees C (435 F).

  • Grate the carrot and the cheese you want to use. Add them to a bowl with the boiled bulgur, corn starch, sweet chili sauce and seasoning. The salt can vary a bit depending on the cheese you pick, so season after taste.

  • Make patties/ fritters out of the mixture and place them on a lined baking sheet. Brush on some olive oil and bake the fritters in the oven for approx 10’. Turn them and cook them for another approx 5’.
