Reversed Apple Crumble Pie

Autumn Apples + Pie. Do I even need to say more? It’s that time of the year, at least in Sweden, where the apples taste the best ever and we are able to acknowledge apples straight from the apple trees and enjoy fantastic, delicious autumn apples. Even apple desserts, cakes and pies is on a whole new level this time of the year due of these fantastic, organic apples so I really felt like I wanted to give you a recipe you could make too.
This is what I call a "reversed apple crumble pie”. Instead of having the crumble over the apple slices, I have put it under them so that the beautiful apples are visible. This crumble is made with oats to make it more fiber rich, and the whole pie is sweetened with stevia as main sweetening. You can also use optional sweetening (even sugar since we only use 1 tbsp for the whole batch) if you want to.

Reversed Apple Crumble Pie
1 smaller pie
INGREDIENTS:
100 g soft room temp. diary free butter
2 dl (0.8 cups) gluten free, fiber or ordinary rolled oats
2 tbsp buckwheat flour or wheat flour
a pinch of real vanilla
1 tbsp stevia
2 sweet flavored apples
1,5 tsp cinnamon
1 tsp cardamom
Agave syrup or maple syrup
HOW TO MAKE:
Heat oven to 200 degrees.
Cut your butter in cubes. Mix thereafter butter, grains, flour, 1 tbsp stevia and vanilla thoroughly to crumble.
Peel your apples and slice thinly.
If wanting the pie reversed, press out the dough evenly into the pie pan. Don’t forget the edges. Top with the apple slices, spread over som stevia/coconut sugar, powder the cinnamon and cardamom and finish with some rippled agave syrup.
If wanting the pie traditional. Start with the apple slices, stevia/coconut sugar, cinnamon, cardamom and agave syrup, and then top the apples with crumbled pie dough.
Place the pie in the oven for approx 20', until the pie is golden.
Serve with vanilla ice cream or your vanilla custard sauce.
