Roasted Purple Potatoes with Fluffy Vegan Garlic Dip

Who could have known that I would show you purple potatoes here on my blog? Not me anyway! It was out of a coincidence I ended up getting purple potatoes. I was on a walk home from the gym the other day, and passed by a small boutique who had placed them, along other products, outside their shop with the note “closed until further notice. Take it if you want :) “. Me, being all excited getting the chance to test cooking with purple potatoes, took a few with me home.

And now, here I am today with a fantastic vegan recipe of roasted purple potatoes, with herbs, garlic and olive oil, served with a delicious fluffy garlic dip. Oh yes! Purple potatoes are here to stay!

What is purple potatoes?

Purple potatoes is one of many kinds of potatoes. This potato is native in the Andes mountains in South America, and is known for it’s brilliant purple color which doesn’t even chance color when cooked. 

The purple color indicates the presence of high antioxidants, particularly polyphenol antioxidants called anthocyanins. The same antioxidants can be found in blueberries too. Anthocyanin is known for, for instance, reducing the risk of cancer.

How do we cook this purple potato?

Whatever you can make with ordinary potato, you can do the same with this potato. The color makes it a bit more exciting, a little bit different, unique and possibly even more beautiful to watch. All kinds of potatoes in general have their own specific kind of taste, and this purple potato is no exception. However, there’s a minimal change in flavor so don’t be afraid trying it. It’s really good and when roasting it in the oven like I have, I’m sure you will love it. Serve it with my fluffy garlic dip for a festive occasion, or with a protein source for dinner, and you’re done.

THIS RECIPE IS:

Roasted Purple Potatoes with Fluffy Garlic Dip

for approx 4 servings

INGREDIENTS:

Approx 8 potatoes

5 tbsp olive oil

2 tsp dried thyme

1 big garlic clove

Sea Salt

2 tbsp Bre Oliv from Zeta*

4 tbsp vegan creme cheese with or without herb flavor

1 small pressed garlic clove

Optional Herbs, preferably fresh parsley or basil

Sea Salt

HOW TO MAKE:

  • Heat oven to 225 degrees C, and put a baking paper on a big baking sheet.

  • I prefer not peeling the potatoes so if you won't brush the potatoes and clean them thoroughly with water. Cut them into 1/2 cm thick slices and place them on the baking sheet.

  • Pour the olive oil into a bowl. Add the dried thyme and pressed garlic and mix it with a spoon. Spread this marinade over the potatoes and mix everything together with your hands or using a spoon. At last, spread over some sea salt.

  • Roast in the oven until it has gotten some color and the potatoes are soft. It takes approx 20'.

  • Meanwhile, make the fluffy garlic dip. Mix the bre oliv thoroughly with an electric hand whisk. Add the creme cheese and whisk again until fluffy. Add the garlic, herbs and some sea salt, and combine with a spoon. Taste and add more flavor if needed.

  • Serve this with your potatoes.

NOTES:

  • If you don't have Bre oliv, you can just skip this and pick vegan creme cheese instead.
