Simple 3 ingredient Cookies - Sugar Free and Vegan

Cookies make the world a better place.

I call these my sunshine cookies. Why? Not only because they look like suns, but because they bring me happiness, light and so much deliciousness in just one piece of bite! These cookies are also so simple to make and only consists of three ingredients. It’s the best really and today I’m going to share this simple recipe to you all and share some extra secrets on how you can make these into sunshine cookies and how to flavor them with other flavors if you’d want to.

Let’s talk about flavors…

These cookies are only made with three ingredients; flour, peanut butter and agave syrup or maple syrup. It’s a very simple recipe and the flavor of them gets… natural. My hubby preferred them just like that. It suits so well together with a glass of plant based milk but if you are an “extra” person who likes to have It a little bit extra, I’m going to give you some flavor combinations you could also add to the cookie mixture if you’d want to:

  • Vanilla. Very simple but it makes a difference. Add just a little bit of real vanilla powder or some vanilla extract.

  • Lemon. Suits so well in these sunshine cookies. Add just a little bit of lemon juice and the lemon zest + some vanilla to create a nice balance and you’re done.

  • Chocolate chips. When talking about cookies we obviously also have to mention chocolate chips. If you are one of those who likes chocolate, then go for the chocolate chips.


THIS RECIPE IS:

  • Vegan

  • Sugar Free

  • Only consisting of 3 ingredients

  • So simple to make

  • Great accompanied with a glas of plantbased milk

3 Ingredients Cookies

approx 10-12 pieces

INGREDIENTS:

80 gram plain wheat flour

120 g (1/2 cup) peanut butter

80 g agave syrup or maple syrup.

+ optional flavor if you’d want to.

HOW TO MAKE:

  • Heat oven to 175 degrees C (345 F). Line a baking sheet.

  • Combine all the ingredients throughly in a bowl using a spatula or spoon to big dough ball.

  • Roll balls (approx 10-12 pieces) and place them on the lined baking sheet a few cm apart.

  • Use a glas, with a nice bottom (like the sunshine pattern I have) and press out the the balls to cookies.

  • Bake the cookies in the oven for approx 10’.

  • Let them cool on a grill to give them a crispier texture.

  • Dig in!
