Vegan Spicy Red Lentil Stew

I think it’s time for Netflix and Chill(i).

One of my favorite dishes - my Hot Red Lentil Stew. This is the stew I’ve been showing you so many times on my instagram because… well, it’s just great! It’s simple to make, vegan, full of flavor and protein rich which makes it very satisfying too. What I also love about this dish is that it’s perfect food prep/ lunch box food to bring with you when you’re on the run one day. I just love this, and if you haven’t tested this stew yet I really encourage you to do!

This stew is…

This stew is completely vegan and gluten free. You get the proteins from the red lentils and the flavor is from the spicy seasoning, the garlic, chili and then - the fresh herbs. I love my vegan spicy red lentil stew so much and it is best served with basmati rice or in homebred lavash pita bread.

How do I serve it?

You can serve this stew with rice, bulgur, quinoa, in Lebanese pita bread even in taco shells or in a bowl! The variations are endless! Since this stew is a bit spicy it also suits very well to serve with a thick, Turkish style yoghurt, on the side. Try it!

Spicy Red Lentil Stew

approx 4-5 servings
INGREDIENTS:

1,5 dl dried red lentils

1/2 yellow onion

1 pressed garlic clove

Cooking oil for frying

1 tin crushed tomatoes

1 tin cherry tomatoes ( or two crushed tomatos)

1 tsp sweet paprika powder

1 tsp cumin

1/2 tsp Cayenne after taste

A little bit of chili flakes

Salt and black pepper

Herbs, like cilantro or even fresh basil works good.

HOW TO MAKE:

  • Rinse of your dried lentils under cold water and pre boil them for approx 5'.

  • Finely chop your onion and red chili.

  • Heat up a frying pan and fry your onion and garlic until your onion is transparent.

  • Add your crushed and cherry tomatoes. 

  • Add seasoning and add your pre-boiled lentils to the stew. Combine. Add a little bit of extra water and then let it simmer for approx 10' under lid on low heat.

  • At last add possible herb (except if using cilantro you just garnish with it). Taste and see if the stew needs more seasoning.

  • Then serve preferably with rice.
