Simple Tortilla Pizzas

Pizza - the only Love Triangle I want.

Nothing felt as right today as eating pizza. Mini Soft Tortilla pizzas. So great really and if you haven’t ever tried making pizzas out of tortilla bread, oh what have you been doing with your life (no offense)?!?!? I am by the way totally the kind of person who loves to have thinner dough on my pizza. I’m all more of the Italian type of pizza chick than a thick American pizza chick, if you know what I mean. So today this Tuesday, when many of us aren’t feeling making something complicated for dinner and probably just want to order something, make simple tortilla pizzas instead!

What I love extra about tortilla pizzas is…

…that you basically don’t even need to complicate things when making them. I literally just threw whatever ingredients I had in my pantry, fridge and freezer onto my pizzas and they become like YUM overload. I have made:

  • Greek Inspired Tortilla Pizza. Almost like a Greek Salad but on pizza. Not really, but almost.

  • Italian Mozzarella Basil Pizza. A combination that never goes wrong - tomato, mozzarella and basil. You get it.

  • Vegan Pesto Pizza. Since vegan cheeses are complicated I went for vegan pesto instead because I really love to add pesto, in general, to all pizzas (or actually, to all FOODS). So this pizza is a simple but still delicious one with pesto.

  • Overload Mozarella Pizza. This one almost just became one whole big mozzarella pizza, haha, but honestly - that’s kinda dope. It is like a mozzarella pizza with some mushrooms and arugula. Not bad.

You can however add whatever ingredients you want to your pizzas. Making homemade pizzas is like making your own taco. It’s a simple dish but just when using some few unique and fun combinations, you can create some really delicious (and possibly even luxurious) flavors.

Tortilla Pizzas of various kind

INGREDIENTS:

4 soft mini tortilla bread (other sizes works too)

approx 5 tbsp Homemade tomato sauce, tomato paste or crushed tomatoes

Greek inspired pizza:

20 g feta cheese

3 cherry tomatoes or 2 slices tomato

2 slices red onion

2 slices, preferably by green bell pepper

Oregano

Italian Mozzarella Basil Pizza:

2-3 thin slices mozzarella

3 cherry tomatoes or 2 slices tomato

Fresh Basil

Vegan Pesto Pizza:

2 mushrooms

3 cherry tomatoes or 2 slices tomato

Fresh Basil

HOW TO MAKE:

  • Heat oven to 200 degrees C (390 F) and line a baking sheet with baking paper.

  • Place the tortillas on the baking sheet. Spread ut a layer of tomato paste onto the breads

  • Slice the tomatoes and mushrooms and garnish your tortillas after taste with them. Add cheese or pesto, olives if you have that, sliced pepper, onion and finish with herbs. OR, add what ever you want really. Be creative!

  • Place the pizzas in the oven for approx 6’ or until light golden brown on the sides and until the cheese has melted.

  • DIG IN.
