You have probably seen on Instagram that me and my boyfriend and I celebrated our anniversary last Tuesday. We chose to have a luxurious staycation in the newly renovated and upscale Radisson Blu Scandinavia Hotel in my hometown Gothenburg. It’s more or less only 10 minutes away from our home by car, but as soon as we stepped inside the hotel we entered a completely new world. My boyfriend and I stayed inside the hotel complex for the entire stay - without any desire to go out and do other stuff. And today I thought about sharing our experience with out junior suite, spa and dinner at the newly opened Nordic restaurant, Noot.

As I said, it’s truly like stepping in a whole new world when you get to this hotel! I was invited to their opening event two weeks ago and was impressed by their renovation. On the main floor, where you enter the hotel and the lobby you’ll find yourself standing in a room with a really high ceiling (like reaaaally high!) with beautiful decorations on. That’s also where we had our breakfast buffé and our evening drink at a beautiful bar in the middle of this enormous room.

Anyhow, we took the elevator up to the fourth floor to check in our room. When you book a junior suite you have access to the hotel’s spa, gym and yoga classes for no extra cost. You also, of course, get your own fluffy bathrobe, slippers and the espresso machine. To be completely honest with you, what I kind of love the most with staying at hotels is the oversized, white bathrobes… as well as the big and comfortable beds of course! We also had two bathrooms in our junior suite as well as a small living room area with a sofa and TV, plus a balcony! Like a hotel dream, don’t you think?

Right after we checked in we changed into swimwear and took the elevator down to the basement where their spa is, called Hagabadet. It was so beautiful and harmonious! It was like finding a secret, tucked away harmonious oasis. And as we where there at like 4 pm we were more or less all alone at the spa. At the end we got really hungry (as ones does at the spa) and went up to our hotel room to change and go down and eat dinner at Noot.

The drink with the Noot-Ice is called "Söderhavet" and was a non-alcoholic sweet-sour drink I fell in love with. To the right we have my lovely vegan main course.

Noot is a brand new restaurant in the same building as the Radisson Blu Hotel. I have walked past this restaurant before walking down Södra Hamngatan in central Gothenburg and have been really eager to try their food in their modern Scandinavian interior decor. And now here I was! What I absolutely loved was their open kitchen, where we could see the chefs preparing the food, and decorating carefully each plate.

Noot is thus a Scandinavian restaurant with Nordic food. Their food philosophy is to change the menu according to the seasons and thus the accessibility of the products. I really appreciate that they incorporate a way of working in a more sustainability fashion. Anyway, I chose to try their vegan appetizer and main course - and after that, as dessert, their “apple dessert”. Their vegan appetizer with black root, vegan smoked mayonnaise, black root chips, sautéed leek and seaweed caviar was unbelievable! I also (of course) tasted my boyfriends appetizer which was dill herring with marinated egg yolk, butter, potatoes, artichoke chips, pickled onions, Swedish yellow Västerbotten cheese and sour cream, and that was also absolutely amazing!

For the main course I chose the pea puree with lentils, semi-dried tomatoes and decarbonized salad. Absolutely incredible! Their apple dessert was also really good. All in all, everything felt very fresh and I really liked the flavour combinations.

I also like to give a shoutout to the staff for giving us some high-quality service. Also, I want to point out how awesome their non-alcoholic drinks were. I didn’t like the "Lingon forest" but "Värhanet" and "the South Sea" were really, really good. I, as one who doesn’t drink alcohol, could really see myself coming back for these drinks. Really good! Our evening ended in our hotel bed watching the new episode of Game of Thrones before we fell asleep and slept like babies.

Waking up the day after, unfortunately I had a meeting to be at at 11 am so we couldn’t sit for ours and eat breakfast. But about that breakfast, you guys! Wow! There’s nothing better than a hotel breakfast brunch, right? And this was extraordinary! They had everything ranging from non-vegetarian, vegetarian and vegan. You could get also get a range of food gluten free and lactose free. There were some desserts and patisseries, but not too much. The buffé wasn’t dominated by chocolate croissants, instead there were natural and fresh ingredients of great quality. Yes, pleeease! I like that!

All in all I want to thank Radisson Blu Scandinavia Hotel for our amazing stay. Me and my boyfriend got to spend our anniversary day in the cosiest way possible and we are so thankful for it!
