Sugar Free Vegan Cake Pops

If you by any case have over left cake, don’t throw it away. Make cake pops!

I don’t know if this is the reality, but yes, if you by any chance have some remaining cake left, don’t throw it away. Personally, sometimes when I make loads of different cakes for work, I don’t always have the time (or “guts”) to eat them all. Instead of throwing the cakes away you can just reuse the cake and make cake pops of them instead! This is very festive, and a great idea for birthday parties - for both adults and children!

What is a cake pop?

But if you don’t know what a cake pop is, let’s start with that. A cake pop is a festive round ball, made out of cakes, which is dipped into various melted chocolates and which thereafter is garnished in for instance coconut flakes. You just stick a pop stick into the ball so that it pop sickle. Like I have said, it’s truly so festive and fun, and it’s really delicious. Not speaking of all various cake pops you can create!

What “are” these cake pops?

Well, since my cake was both sugar free and vegan, my cake pop also became that. You can really create cake pops on pretty much whatever delicious cake you want, and then the only variation when making the cake pops in the coconut oil you add. You add more cake pop the dryer your cake is. More about this is in the recipe below.

Cake Pops

approx 15 pieces

INGREDIENTS:

300 g optional chocolate cake

at least 2 tbsp coconut oil

300-400 optional chocolate*

Coconut flakes or other garnishing 

15 cake pops sticks


HOW TO MAKE:

  • Mix your cake in a blender.

  • Add a little bit of coconut oil at a time and mix again. I use a sticky cake which means it's kinda sticky from the beginning and don't need as much coconut oil, while other more dry cakes will need more. Add a little bit coconut oil at a time, mix and feel. You can squeeze the cake dough in you hand palm and when you can roll it to balls without it falling apart, you have found the right amount for your cake.

  • Roll balls of the dough and place on a baking sheet on a tray. Add a stick to the balls. Place in the ridge for approx 10' so they set.

  • Meanwhile melt a little bit of your chocolate. Dip the balls in the chocolate and place on the baking sheet. Place in the fridge for 45'.

  • Melt remaining chocolate and dip the cake pops in it. Place them one last time on the baking sheet. Spread over some coconut flakes and let them set in the fridge.

*NOTES:

  • You will dip your cake pops into the chocolate two times so that they don't get too bitter. You can dip them first in “milk” chocolate and the second time in dark chocolate. Otherwise, you can obviously also take white chocolate or some other chocolate of choice.
