Sugar Free Vegan Caramel Sauce

Caramel is like Edible Gold.

…and for that exact reason I felt like I needed to give you a a vegan and sugar free caramel sauce. This caramel sauce can be eaten in optional kind of way; over ice cream, over desserts, over pies, over chocolate or if you feel like it, why don’t you eat some caramel sauce straight out the jar? If you do, I don’t judge!

Caramel sauce is usually based on sugar, but for this recipe I’m using stevia (or other sweetening like sukrin) and you can use a syrup like agave syrup, maple syrup or fiber syrup. Let the syrup cook until very hot, and then cooling for a while, before placing in the fridge. It’s when it cools that the syrup thickens thoroughly.

Sugar Free Vegan Caramel Sauce

a rather small jar

INGREDIENTS:

1 dl (70 g) stevia powder or other sweetening
1 dl (0.4 cups) agave syrup, maple syrup or fiber syrup
1 dl (100 ml) plantbased cream for desserts

HOW TO MAKE:

  • Add all the ingredients into a small sauce pan.

  • Stir around now and then, and boil up to 125 degrees C (255 F).

  • The caramel won't get completely thick when cooking as it does with caramel sauce made with refined white sugar. When you have boiled it up while stirring, pour the caramel into a glas jar and let it cool completely. After a while you can place it in the fridge, that is when the caramel sauce will thicken and you can use it for your recipes.
