The Best Vegan Chocolate Truffles

P1318624.jpg

Life happens. Chocolate Helps.

There is chocolate and then there is chocolate. But then there is also the best and most simple chocolate truffles in the world - and I have them here. I made these for the first time during Christmas time and have since then made these multiple times. You only need two ingredients to make these delicate, rich chocolate truffles (+ optional garnishing), and the result turns out fantastic. The truffles are also vegan and gluten free.

What kind of chocolate?

You can use whatever chocolate you want, incase it's not white. You can choose by yourself if you want your truffles to be sugar free (that is depending on the chocolate you choose) and how "dark" they should be. If you use a very dark and bitter chocolate I recommend you to use a few stevia drops to add sweetening.

Gluten free?

Yes, as mentioned my truffles are both vegan, sugar free and gluten free. I have used a whip cream based on oats, but t's on gluten free oats. Be sure you check that your oat based whip cream is gluten free if that is a requirement for you.

"Rolling, rolling, rolling in the..." not river but?

You can roll your chocolate in optional ingredient for instance cacao, cinnamon, crushed nuts, cookie crumbs etc. In this post you find various kinds of truffles.

THIS RECIPE IS:

Chocolate Truffles

approx 10 pieces

INGREDIENTS:

1,5 dl Vegan Whip Cream

150 g optional "brown" chocolate*

A very small pinch of sea salt

Steviadrops if needed **

HOW TO MAKE:

  • Boil up the cream in a small sauce pan. As soon as it starts boiling remove the pan from the heat and add the chocolate to the cream.

  • Stir it around with a spoon until the chocolate has melted thoroughly and no lumps are left. Add the small amount of salt and mix.

  • Place in the fridge until the chocolate mixture is set.

  • Scoop out balls of the mixture. Roll them in for instance cacao, lingonberry powder, cookie crumble or nuts if you'd like and then place them on a baking sheet.

  • Store them in the fridge until set and serving.

*NOTES:

  • White chocolate doesn’t not work

  • If you use a very dark bitter chocolate without sweetening, there's a chance you might need to add a few stevia drops.
